not feeling anywhere near good ...
mummy's gone (cancer sucks)
tini's gone (no more helper... and no more stress)
and i have to prepare meals, cook, clean a little...
but then again, whatever dishes i cook would be what i can actually do on my own. i guess that is quite an achievement!

HAPPY 2022 !!
fish day!!
fried red snapper & batang fish with salt & tumeric/kunyit powder. so yummy!
bought 2 whole fish from 628 wet market (for fish head curry)

tempura mushrooms $8 and fried tofu $5 at a japanese stall at an urban farm around bukit merah. went there after daddy went to consult & try hearing aid.

jannah and i went to chang kee to have claypot tofu with rice for lunch. so good!!
claypot toufu $10
with roast belly pork, prawns, yam, veggies
cooked boiled belly pork on 3 jan. sadly, no pics.
(nicely packed frozen belly pork from ntuc $8.90 per 500gm)
2 days later, roasted them in the turbo oven at around 150-175 degrees for around 20-30min. so crispy and crackling!! tender and tasty too. a good snack for crowds or small party Lol

after work, went to amk hub for lunch - got me a cup of boost's berry bang.
also wanted to get some fresh fish from NTUC.
was craving for steamed fish!!
bought:
1. whole greasy grouper (butterfly) $3.84 @$0.99/100gm
2. whole seabass (fillet) 700+gm - total $7.60
3. whole chicken (throw head & tail, clean & chop in half) 800gm, $5.90
aidan was coming home from camp so wanted to let him eat some chicken breast meat other than fish.
by the time i got home from ntuc, it was 3.30pm and i prepared the fish, chicken and cooked a huge pot of round cabbage, chinese cabbage soup with fishballs x20pcs and fishmaw. soup was soooooo good and it was ready for snacking at around 4.30pm!! (no pics again coz aidan and i were too hungry to take any photos haha)

fish was so good that jamie & i woke up early on Sat morning 8am to go amk hub ntuc to buy MORE fish!! ko ko and dio dio also came along. also ended up buying a whole load of other stuff, like a tefal wok pan, frozen scallops, dried fish maw... ha. spent almost 2 hours at amk hub!!

Roast Chicken!!! (for aidan)
30min - 45min, 150 degrees
so pissed i accidentally tore the chicken skin at the thigh/drumstick area :/
had abt 6-8 tomatoes that were about to spoil, so cut them up and roasted them too. some other tomatoes were used for my steamed pomfret.

for 3 mornings in a row, ate fried bee hoon with a fried egg and veggies. even with no appetite, i could finish up the whole plate Lol it's kinda tasty but not quite a wow. so i'm quite surprised i actually ate up everything.
jannah is at home for home based learning and i have no work.
we made breakfast!
scrambled eggs (gobbled them down so no pics haha)
and thai instant noodle - one packet looks like a small portion but it's very filling
cooked the noodles, added an egg and mushrooms.

minced pork,
stir fried chicken thigh,
fried grouper with tom yum sauce/soup
(dinner - no pics - tabao tofu with roast pork, prawns and veggies from chang kee)
used some plain flour (set aside from pancakes) and fried the fish in the new wok pan. tasted so good and the flour bits were so crispy that the bones were eaten till clean LOL not sure what i did different but the tom yum soup was kinda creamy even when i didn't add any cream or milk.

- 2 eggs, beaten and dropped into the soup

recipe - fish maw soup
1 - made a pot of boiling water to cook my broccoli!
boiled water was seasoned with salt, sugar, shaoxing wine and 2 slices of ginger.
so this is now my vegetable stock. very fragrant already!
2. then added the packet soup and water to the vegetable / broccoli stock
3. to the combined veggie & chicken stock, added the ingredients
- fish maw,
- dried mushrooms (already soaked)
- carrots
- later added the 2 types of black fungus
4. seasoned the soup with
- shaoxing wine,
- sesame oil,
- fish sauce,
- light soya sauce,
- white pepper
5. beat 2 eggs, seasoned eggs with salt and white pepper and then drop eggs into the soup!
6. served hot soup with spring onions and coriander

went for my TTSH Rheumatology appt late and couldn't see the doc. so angry. more angry when i bought 3 veggies for $7.50 at nasi padang stall at ttsh hospital kopitiam (veggies were nice but so ex!!! got brinjals, lady's fingers and bittergourd with egg) - and forgot to use my kopitiam card for more discounts. ugggh. 😡
then went to lai wah to get the boiled chicken with ham but the promo is on hold due to cny period. arrrghhhh so i bought ee fu mee which i thought would be $10 but it seems the charges have increased to $14 😡😡
then bought petrol (and fishballs and yakult),
then back to 628 to get chai peng for jannah, daddy and me.

Smoked Salmon Pasta - how to cook:
1. boil veggies, mushrooms, pasta in salted water. set aside
2. fry garlic and onions till fragrant
3. add smoked salmon and fry
4. add milk and cream cheese
5. add pasta and mix
6. season with salt and black pepper
7. add veggies, mushrooms and mix
8. serve with fresh lemon slices for lemon juice

i wasn't hungry and keen to eat dinner but this dish opens the appetite!
brinjal, chicken recipe: (same as mapo tofu)
1. fry chicken and brinjal till golden brown. set aside
2. fry chopped onions, ginger, garlic, fresh red/green chillis
3. add doubanjiang and lau gan ma crispy garlic chilli sauce
4. add salty sauces & seasoning
- oyster sauce,
- fish sauce,
- light & dark soya sauce,
- black vinegar
- sugar
- shaoxing wine
- sesame oil
- water
5. add chicken and brinjals into sauce & cook 5-10min
6. thicken sauce with slurry
7. turn off heat and add
- shaoxing wine, sesame oil,
- chopped fresh coriander and spring onions,
serve the dish hot with hot jasmine rice!!

Recipe - String Beans
- string beans x2 packets
- prima shrimp paste chilli rempah mix x1 pkt
- chopped garlic
- hae bi - soaked a bit to soften
1. fry chopped garlic & hae bi
2. at high heat, add the veggies and fry
3. add the rempah mix & some water to cook the beans
4 cook till the water evaporated and the paste thick
5. season with light soya or oyster sauce
6. serve hot with steamed rice
goes well with egg or omelette!
no pics for meals 27-30 March.
i think it's because we ate the leftover fish and chicken curry for many days!

since i was at chinatown at around 11am
(daddy went to the family clinic for blood test)
bought some braised pig's trotters ($13) from People's Park
shop name is 哈尔滨红肠 - 骨里香熟食
literally means Harbin red sausage - bone in fragrant cooked food
what i didn't know was that the pig's trotter has a smokey flavour!
wow.
and the meat is so moist, succulent.
no gravy or chilli sauce.
plus the stall helps you cut it into bite sized pieces
for dinner, heated it up in the turbo oven
for about 20min, 100-125 degrees
meat was still tender and moist.
amazing!

pan fried with little oil not suitable for these bulky odd shaped cauliflower. perhaps to pan fry and then grill will be better for even coating. kids love this, so it might be nice to have veggie pancakes as well with this type of batter.

cooked ayam lemak chilipadi from scratch!!!
Recipe - Ayam Lemak Chilipadi
Rempah (spice mix) - pound or blend
(i pounded in this order...)
- shallots - 6-7
- garlic x3-4
(set aside pounded shallots & garlic)
- red/green chilipadi or large chillis
(set aside pounded fresh chillis)
- fresh turmeric - 1 inch
- ginger - 1 inch
(set aside both gingers)
Ingredients
- chicken - seasoned with turmeric powder and salt
- optional - potatoes & tomatoes
- serai or lemongrass x4, smashed to release fragrance
- limau purut leaves / kaffir lime leaves x8-10
- daun kunyit x1 - remove stems
(also called turmeric leaves)
- lime juice - 3-4 limes
(or asam keping/asam gelugur 2-3 pcs)
- coconut milk (i used packet type)
- salt and sugar to taste
- cut fresh red chillis for garnish
method:
1. pound/prepare & fry rempah till fragrant and oil separates
2. add coconut milk and the other ingredients
3. add chicken and cook. if needed, add water to cook chicken.
4. add salt and sugar to taste
5. serve hot with steamed jasmine rice
for pounding, i pounded in this order...
- shallots x6-8
- garlic x3-4
- red & green chillipadi - adjust accordingly
- fresh kunyit - 1 inch
- ginger - 1 inch
1. fry rempah
2. add coconut milk
3. add
- daun kunyit
- limau purut
- serai (lemongrass)
- asam keping or lime juice
4. add chicken (season chicken with turmeric powder & salt)
5. cook chicken - add water if needed
6. add salt & sugar to taste
7. add tomatoes and boiled potatoes
8. garnish with fresh cut chillis
serve hot with steamed jasmine rice

6. fresh turmuric and ginger - pound & set aside
in my photos, i added more shallots
when i realised that i did not have enough shallots
we do the agak agak method
(estimate the quantity of herbs & spices)
frying the rempah takes a lot of patience.
we need to know when the rempah is cooked enough to move to the next step of cooking.
after frying the rempah, i added the thick coconut milk - this is following a thai method of cooking - the thais say that the coconut milk will have natural oils to flavour the rempah over heat and this technique will add a new dimension to flavours during the cooking process.

Recipe - Sweet & Sour Pork
1. Pork cubes
- season with salt, soya sauce, pepper, cornflour
2. flour mix (dry)
- plain flour,
- cornflour,
- baking powder,
- salt & pepper
3. egg mix
- 2 eggs,
- flour mix 1 tbsp,
- water 1tbsp
4. coat seasoned pork with flour mix
5. then coat with egg mix
6. coat with flour mix again
7. shallow fry or deep fry - low to medium heat
8. crisp in oven
9. cook sweet & sour gravy
optional - fry sliced onions before adding gravy
optional - add capsicums, pineapple, canned lychees
sweet & sour gravy (agak agak)
- tomato ketchup x4-5 tbsp
- chilli sauce x3 tbsp
- sugar x2 tbsp
- rice vinegar x2-3 tbsp
- sesame oil 2-3 tbsp
- cornflour & water - slurry to thicken sauce
- light soya and salt to taste
10. serve hot
option 1 - stir fry & serve pork in gravy with fruits & veggies together
option 2 - serve crispy pork and gravy separately
i serve the gravy and pork separately so we can add the amount of gravy we want on our crispy pork! most people will fry the crispy pork in the gravy and serve the pork hot and coated with gravy.

Recipe - pork with fermented red bean curd
1. mix the following to season pork
- fermented red beancurd x2 pieces
- shaoxing wine x3 tbsp
- sesame oil x1 tbsp
- sugar x1/2 tsp
- optional - minced garlic, oyster sauce
2. coat pork with cornstarch
3. mix plain flour, corn starch and baking powder together
4. coat seasoned pork with flour mix and fry till crispy
5. serve hot with steamed jasmine rice
Recipe: tau guah with sambal
(Tau hu Goreng Indonesian style)
1. fry tau guah till golden brown (add salt to taste)
2. fry onions, garlic, lemongrass/serai, chillis till fragrant
3. add tau guah and fry
4. add sambal sauce mix and limau purut leaves
(what i would use for frying mee goreng!)
- nasi lemak chilli,
- tomato ketchup
- chilli sauce
- dark/black sauce
5. add french beans or long beans or tempeh
6. fry together till veggie is almost cooked

1. fry the aromatics - garlic, ginger, onions, galangal, cut chillis
2. add the french beans or long beans and fry
3. add the fried tau kuah and fried tempeh
4. add the sambal and chye poh, stir fry.
5. add the limau purut leaves and fry together
6. add water if needed
7. season with salt, oyster sauce and lime juice (little)
7. stur fry till all comes together
8 serve hot, garnish with fried onions and fresh coriander
i'm so pleased with my anyhow cook sambal goreng!!!

so fried them with minced pork and mushroom/oyster sauce

1. boil in a pot....
- 1/2- 1 cup washed rice for 3-4 of us
- ginger - about 1 inch
- chicken stock - used packet ones x1
- water - 2 bowls
- carrots x1
2. while porridge is cooking,
season sliced chicken breast with
- salt and water (brine)
- pepper
- light soya sauce
- shaoxing wine
- cornflour
- sesame oil
- fried garlic and a bit of fried garlic oil
- optional. -ginger x2-3 thin slices
leave seasoned chicken to rest for 10-30min
before cooking/boiling
3. after rice is quite soft in the broth, add...
- chicken breast meat - seasoned
- fried onions and fried garlic
4. optional - eggs, veggies
5. season porridge and serve hot with
- spring onions from the garden
(planted them when my onions started sprouting!)
- salt & white pepper to taste
- sesame oil

roasted pork for lunch
Recipe - Roast Pork
1kg Pork Shoulder Butt / Pork Collar
i bought 500g pork x2 pcs
then season 2-3 days with
- salt, pepper, light soya sauce
- baking powder, cornflour
- shaoxing wine (to remove the smell)
- garlic powder
- smoked paprika
- dark soya sauce (for color)
- oil
- brown/white sugar - dilute sugar in warm water - 1/2 to season, 1/2 to glaze
- a little water
roast in turbo oven with some liquid
and tomatoes/potatoes etc,
150 degrees
30min each side
i made some boiled eggs just in case the pork was too tough - if too tough, i had to resort to braising the pork in tau yew (black/dark soya sauce). but today, the pork was tender!! (thanks to the baking powder)

breakfast - chee cheong fun with fried egg and fish cake - too much gravy!! and she served me a large chee cheong fun instead of a small portion :/
lunch - geylang bahru hawker centre -
we had steamed fish with black fungus $6
steamed minced pork with mui choy $6.50
steamed chicken with codyceps $8
2 bowls of rice $1
total $21.50 - paid with CDC vouchers
dinner (no pics) - bought sesame oil chicken and pig trotters from geylang bahru. slow cooked old cucumber soup with pork ribs.

didn't get a chance to cook my leftover tau gueh/bean sprouts, koo chye/chives and kang kong though hahaha!!

my laksa pot uses prima taste's rempah - simply boil the rempah in coconut milk and water that i used to boil my potatoes in. then added some fresh ingredients... wanted to add more stuff but the pot is too full :(((

Recipe - Assam fish (grey mullet)
- garlic x8 cloves
- green chilli x3 to x4
- assam paste
- black sauce
- salt to taste
types of fish for this stew
- Chi Kak her = ikan terubok (toli shad)
- Grey Mullet
- Saba
- Salmon
this dish is made for the ikan terubok fish. but since this fish is hard to find at the wet markets these days, we replace with grey mullet fish, saba or salmon. i think it's a nonya dish although i'm not sure how my grandma got the recipe (likely from her grandma or foster mum who was a nonya).
this was my fav fish stew as a kid!! my grandma and mum loved it too. and i used to drink up the gravy as if it were a soup Lol
Recipe - Assam fish
- grey mullet in this video
- garlic x8 cloves
- green chilli x3 to x4
- assam paste
- black sauce
- salt to taste
boil till garlic is soft and the gravy is a little thicker
the white pot is too small for my fish! arrrgh!!

lunch - went to the hong kong food place at sin ming with daddy, christen, ko ko and dio dio. and we ate till super full! so didn't even have any appetite for dinner :(((
made jannah's dinner - corn beef, kimchi and nonya archar for a meal... yummmmm!!!
and added saba fish into my assam fish stew!! (no pics coz the fish is all black LOL)

since beef takes 4-5 hours of slow cooking, made other things for lunch.
lunch - fried minced beef with string beans, oyster sauce & garlic
- minced beef seasoned with salt, light soya, pepper, cornstarch & garlic oil
dinner -
saba fish with japanese soya noodle sauce & sake, garlic, spring onions (no pic), had this with the leftover assam fish sauce
bought beef at 628 market - more ex now :(
- oxtail $31 ($24/kg)
- golden coin $18 ($21/kg)
- minced beef $5
- tendon x1 pc - $5
total $59
Recipe - simple beef / oxtail soup
- beef - golden coin, tendon, oxtail
- red shallots x10
- garlic x1-2 cloves
- salt, light soya sauce
- white/black pepper
- tang gui x2 pieces
- shaoxing chinese wine
- rock sugar or raw/brown sugar
slow cook for 4-5 hours
below: removed the beef meat, oxtail and seasoned with
- light soya sauce,
- white pepper
- garlic crisps & garlic oil,
- a bit of sugar and
- shaoxing wine

aidan didn't want to eat the golden coin beef piece i heated up so i ATE it! wow. and i had it with rice and drizzled some beef soup into my rice. the overnight beef soup is so thick and sticky... and i had removed the layer of oil (hardened oil after leaving the pot in the fridge overnight).
i added some chillipadi, lime juice, soya sauce mix to the beef, added leftover roast tomatoes, fresh coriander... and my meal is so appetizing! 很开胃!!

dinner
ending the month of june with a very simple meal. i dare say, my veggie dish tastes like what they serve at the restaurant and zhichar stalls!! the smell of ginger and the cooking is lingering in the bedroom 1hr later!! woah....!!
i didn't bother to add other veggies that were in the fridge, was afraid we couldn't finish and too lazy to prep - i could have added other veggies, eg baby corn, straw/fresh mushrooms, sweet peas, leeks, fried yam, etc. adding fresh prawns, squid/cuttlefish, toufu, pork/chicken slices would be nice too....
Recipe - Veggie Stew
this stew usually includes fresh seafood
and flour-coated fried fish slices or fried fish head
- napa cabbage (used 1/2)
- mushrooms
- carrots
- ginger - approx 1 inch
- garlic - 4-5 cloves, chopped
- red chilli x1
- eggs
cooking
1. fry the ginger till fragrant
2. add garlic and salt, fry till fragrant (also added fried garlic)
3. add the hard stems/stalks of the napa cabbage and carrots
4. add oyster sauce, mushroom sauce, light soya, mountain sauce, white pepper
5. add shaoxing wine and sesame oil
6. add chicken or pork or fish/ikan bilis stock
7. add all the remaining veggies and red chilli
8. add eggs
9. add cornflour slurry and thicken gravy
10. switch off the fire, add shaoxing wine, sesame oil and serve hot
