chillipadi lemak ayam (chicken), oyster sauce chicken thigh pieces with whole garlic, stir fried french beans & chye sim













Recipe - Ayam Chillipadi Lemak

Rempah
- 6 red chillipadi
- 6 green chillipadi
(adjust chillipadi quantity if too spicy)
- 3 big red onions
- 2 garlic
- 1 inch fresh tumeric
- 1 inch ginger
- 5 candlenuts

Ingredients
- chicken x1 cut into pieces
- rempah (chilli paste - see above)
- 2-3 daun kunyit (fresh kunyit/tumeric leaf)
- 5-6 limau purut leaf (kaffir lime leaves)
- 2-3 lemongrass
- coconut milk

seasoning
- 1tbsp tumeric powder
- 1 tbsp fresh ginger paste
- salt to taste

method
1. season chicken with
- 1 tbsp tumeric powder
- 1 tbsp pounded ginger
- salt
2, fry rempah
3. fry chicken
4. add lemongrass limau purut, tumeric leaf, coconut milk
5. add 2 red chillis + 2 green chillis for garnish
