清蒸魚 Simple Steamed Fish or
Steamed Grouper Hong Kong Style
1. Prepare Soy Sauce mix
- Superior Light Soya Sauce,
- sugar,
- garlic oil
- shaoxing wine
2. Prepare Topping
- Sliced ginger,
- onions (because i ran out of spring onions!!),
- red chilli,
- coriander
3. Prepare Fish - Season & Steam
- Salt & Pepper
- Shaoxing Wine
- Garlic Oil
- Sliced ginger & Spring Onions
4. STEAMED FISH HONG KONG STYLE
- place steamed fish onto a plate,
- top with spring onions/onions, coriander, ginger,
- pour prepared soy sauce on the side
- fry sliced ginger in hot oil and pour hot oil/ginger mix over the topping & the fish
Soya Sauce Mix = Superior Light Soya Sauce, sugar, garlic oil, shaoxing wine Topping - Sliced ginger, onions (because i ran out of spring onions!!), red chilli, coriander |
Prepare Fish - Season & Steam - about 5-7min for this piece of Red Grouper Season with salt, pepper, spring onions, ginger, shaoxing wine, garlic oil + Steam |

One Pot Meal
Sukiyaki Beef with plenty of fresh veggies & mushrooms!!
Cooked with butter, garlic & onions, sprinkled with japanese chilli flakes mix
Sauce
- Japanese Soy,
- Sugar,
- Soba Soy Sauce,
- Mirin,
- Shaoxing Chinese Wine,
- Salt & White Pepper
Stir Fry Mixed Veggies with garlic & ginger
- brocoli
- carrot
- tomato
- black fungus
- shitake mushrooms (dried)
- baby corn
- sweet pea
- chinese cabbage
- enoki mushrooms
- button mushrooms
Gravy
- light soya sauce
- salt & white pepper
- shaoxing wine
- oyster sauce
- fish sauce
- mountain brand seasoning sauce
- water & cornstarch
- optional - liquid from soaking dried shitake mushroom
1. fry ginger & garlic & salt in hot oil till fragrant
2. fry black fungus and shitake mushrooms
3. fry "hard veggies" - baby corn, carrot, stem of chinese cabbage & brocoli, brocoli
4. add shaoxing wine in hot wok
5. add rest of veggies
6. add gravy & fry till cooked to right texture
7. serve hot and eat with hot steamed jasmine rice

Simple Italian Bread Salad
1. stale garlic bread
Toast, crispy bread with extra virgin olive oil, balsamic vinegar & garlic spread
if too stale or hard, add water to soften before toasting
2. chopped veggies
- tomatoes
- cucumber
- red onions
- fresh parsley
3. dressing
- honey
- balsamic vinegar
- extra virgin olive oil
- lemon/lime juice
- pounded raw garlic x1
- salt & black pepper

My Simple Beef Soup
Beef 2kg ($32
- Golden Coin 1.1kg ($18)
- Oxtail 1kg ($14)
- white & black peppercorn - crushed
- red shallots x6-7
- 1 fresh garlic clove
- 1/2 tbsp fried garlic
- salt & light soya sauce to taste
- 1tbsp raw/brown sugar
- cordon bleu brandy x3-4 tbs
- tang gui - 2 small pieces

tried making tandoori at home but ended up cooking Masala Chicken LOL
Masala Chicken
Rempah - Mix the following...
- ginger & garlic paste
- onion paste
- tumeric powder
- chilli powder
- coriander powder
- cumin seeds (jeera)
- garam masala powder
- plain yoghurt
- lime juice
- salt to taste
- black pepper
- oil
1. add oil & fry onions, ginger, garlic, mixed seeds, curry leaf, green chilli in oil
2. add chicken & brown chicken (vegetarian version - add brinjal & tomatoes)
3. add rempah & fry together
4. add coriander leaf
5. cook till chicken is ready and curry paste is thick
