what we ate in Nov 2019

mini purple brinjals are in season! yay!
and we found a yummy way to cook chicken breast meat
lots of veggies, hopefully, this month
slow-cooked tender beef - shin or golden coin or oxtail
loads of cornbeef and eggs LOL

dinner -
thai tung hoon salad with minced chicken breast
1. fry minced chicken with garlic, red & green chillis, onions, fish sauce, sugar, soya sauce
2. boil tung hoon to al dente
3. make sauce - fish sauce, sugar, light soya sauce, lime juice, chilli, chicken stock
4. mix minced chicken, tung hoon noodles, sauce, sliced onions, chopped coriander, cucumber
5. serve immediately

beef for dinner - golden coin beef!
Beef Golden Coin. Removed from the bovine rib, the golden coin muscle is soft and goes well both in the stove and in the grill. Its cut is running with veins, giving it a soft jelly texture after cooking.  

soak beef until water is clear (no blood)
this is approx 1.25 kg @$17/kg - about $21 from 628 AMK



beef, shallots, garlic, red dates, tang gui, sugar, brandy (martell cordon bleu)
light soya (fragrant/superior), salt, white/black peppercorn, shaoxing wine & fried garlic before serving
just dump them in the slow cooker and let it cook for about 4-5 hours, medium to high heat



remove beef and let it rest
season with soya sauce, sugar, shaoxing wine, fried garlic oil

slow cooked in a little water, seasoned with salt, crushed white peppercorns,
red dates, oyster sauce, light soya (used 3 types!), fish sauce, sugar, shaoxing wine

- water - x2 rice bowls,
- chicken feet - 1kg  or about 25 LARGE claws
- flower mushrooms (v small) - x20
- salt,
- crushed white peppercorns x2 tsp,
- red dates x2-3 (seeds removed),
- garlic x1
- shallots x5
- oyster sauce,
- light soya,
- fish sauce,
-  raw or rock sugar,
- shaoxing wine
optional - sesame oil

lunch - beef, brinjal with salted fish and chicken minced, veggies, fried kuay teow
dinner - cornbeef and eggs

fried kuay teow with veggies and egg
stir fry garlic & chillis, then fry kuay teow,
add seasoning (oyster sauce, fish sauce, light & dark soya), add egg

fried kuay teow with veggies and egg - best eaten with a squeeze of lemon!
here, i topped the kuay teow with brinjal, minced chicken, salted fish,
chillipadi & lemon  coz we ran out of lime :(

we ate up ALL this beef!! so yummy!!

dinner is a little simpler

dinner - beef (golden coin) & beef soup

$7 for half a duck,
$14 for a whole duck

thai sauce for beef soups -
raw garlic (chopped or pounded), red & green chillipadi,
coriander, fish sauce, sugar & lime juice
same ingredients as steamed fish with garlic chilli and lime

resting the cooked beef - so soft it falls apart!
this lot costs $20 from 628 amk. (golden coin @$17/kg)
cooked beef is seasoned with light soya, sugar, fried garlic & garlic oil, shaoxing wine
