Alow's Recipe
NYONYA AYAM LAKSA LEMAK / SAYUR LODEH
Ingredients
REMPAH
- dried chillis
- fresh red chillis
- bawang merah
- serai (lemongrass)
- langkuas (galangal/blue ginger)
- kunyit (yellow ginger)
- buah keras (candlenuts)
- belachan (roasted)
- ketumbar (roasted coriander seeds)
Other flavours:
- limau purut
- laksa leaves
- ginger flower
- serai
- hae bi (dried prawns) or ikan billis
- fresh grated coconut – squeezed into cream & milk
“Meat”
- whole chicken
- fish cakes
- sotong ball
- yong tau hu
Other Ingredients
- round cabbage
- long beans
- turnip
- carrot
- pumpkin
- tung hoon
- quails eggs
- tau guah
Preparation
1. fry rempah with coconut cream (till oil comes out)
2. add coconut cream and milk to make the gravy
3. add all other ingredients, salt/soya sauce to taste
above recipe with some “secret” tips :)
