omg so much food!!
and a lot of prep too...
most of us have some health condition or food preferences, so our food kinda reflects a bit of adjustment from more elaborate recipes Lol we have heart issues, cholesterol, diabetes, weak stomach and old age issues to consider - so less oil, less salt, less sugar, limited dairy like no cheese or butter (except garlic bread), add more salad/veggies, less carbo! still, one of the biggest and forgotten point - we cooked more than we can eat!
so, our menu is very extensive!!! haha
i can't believe our spread is like a freaking buffet!
MENU:

auntie dolly's bbq pork ribs,
gammon ham with pineapples,

fried chicken thighs,

(we love this so much that we ate this without a picture!)

BEST BBQ PORK!!
kid's favourite dish for the day is unanimously Auntie Dolly's bbq pork!
it's fall off the bone tender and the seasoning is spot on - plus less sugar, salt and oil!
recipe - auntie dolly says she uses a dry rub - garlic & onion powder, chilli powder, black pepper, spices & BBQ sauce on these frozen baby back pork ribs that she gets from chinatown or the other wet market she mentioned... i forgot the location now ugggh!!! she then pressure cooks the pork in her phillips 5-in-1 cooker, then roasts the pork for about 10 mins to brown. omg the baby back ribs is amazing with all the fruit sauces!!!
what i love about it is that her bbq pork is not as sweet as the traditional american roast pork ribs. and it's certainly loads better than yardbird's pork ribs!!

ROAST CHICKEN
this is the dish that made lunch about 1 hour late!!
it took over 2 hours to cook it because we didn't plan the cooking properly LOL
by the time it was done, lunch was already about 1 hour late. it's too funny that the chicken went uneaten during lunch... by the time Christen was back for lunch, everyone had finished eating, chatting and had moved on to chinese tea, so our uneaten roast chicken had been rested for the right amount of time! LOLOLOL christen ate up & enjoyed some of the tender, moist and delicious chicken breast which i carved for him.
roast chicken recipe:
salt, black & white pepper,
honey,
black sauce,
a bit of water in the baking dish
steam, roast & rest chicken before serving

what we should have done was to steam the chicken before roasting so that the cooking process would be a lot faster and to make sure that the chicken is cooked through and still tender and moist.
anyways, a roast chicken is way better than a roast turkey. it's an asian's nightmare - too much breast meat!! ewww

BRAISED SHOULDER BUTT PORK (NGO HUEI BAK)
pressure cooked till tender (about 30min)
shoulder butt pork
seasoned with salt, white pepper
and a bit of baking soda (optional)
braising sauce:
soya sauce - fragrant ones
white pepper corn - grounded and a lot
mirin
shaoxing wine
raw sugar
fried garlic

VEGGIES
1. Roast pumpkin, baby potatoes, carrots with salt, black pepper, fried garlic oil
2. Stir fry mushrooms with sweet pea, capsicums
3. Boiled cauliflower & broccoli in soya sauce mix
- then this stock was used to make the braised pork
4. Garden salad - iceberg lettuce, cherry tomatoes, cucumber, capsicums, celery

HOME MADE SAUCES & SALAD DRESSING & GARLIC BREAD

below my homemade recipes:
Recipe - Apple Sauce
- Granny Smith apples x5 cut into small cubes
- raw sugar - about 5 small packets used at cafes
- cinnamon stick x1
- lemon & orange peels - about 3-4 slices each
- lemon juice
- a pinch of salt
Recipe - Pineapple Sauce
- ripe honey pineapple, half (remove stalks) - chopped & minced
- boil with raw sugar (used about 3 small packets used at cafes)
Recipe - Honey Mustard Salad Dressing
whisk till creamy
- whole grain mustard
- honey
- freshly ground black pepper
- salt
- extra virgin olive oil
Recipe - Balsamic Vinegar Salad Dressing
- extra virgin olive oil
- good balsamic vinegar
- honey
- salt & freshly ground black pepper
Recipe - Garlic Bread - Spread (no pic)
- fresh garlic - chopped or minced or pounded
- butter (softened) or olive oil
- salt & black pepper
- fresh parsley
- mixed herbs of choice
(i usually use spaghetti bolognese mix of dry herbs)

this is like a back-up dish and also since the children would be home for lunch and dinner.
Recipe1: Roast Chicken with Garlic
- season: salt, black pepper, pounded garlic
- add a touch of dark soya sauce for color
- optional: a tiny bit of honey
