- roast veggies - pumpkin, red and green capsicums, carrots, button mushrooms, tomatoes
- stir fry celery with capsicums and garlic
- chicken feet and mushroom stew

- ginger paste for steaming fish or chicken or rice (no pics)

so we tried to make some tandoori with curry powder and curd bought at tekka. at the end, we had to add our own ginger-garlic paste, lemon juice and salt... good thing we knew that! it didn't taste like tandoori but was still very yummy!

Crazy Weekend!
the weekend from 8-11 Dec 2021 had been dominated by the news of president trump & his incitement to storm into capital hill. wow. i can hardly eat or think of food. it feels like the world is upside down and about to end. sigh. it does feel like the korean drama serial "sweet home"- at the point where surviving humans come to realise that the world is now overrun by "monsters" who are engulfed by their desires. further down the drama series, we find that monsters and humans aren't that different after all! sounds like what is happening to our world right now, with covid19 pandemic and people doing ridiculous silly things.

christen was so greedy he just piled his plate without making it look nice. just placed his food wherever there was white rice Lol said he enjoyed his lunch! nice! ("nice!" is his key word LOLOL)

golden coin beef is always a WOW.
not so much for how it looks. but how it tastes and its texture!
soft wiggly tendon and tender beef - all melt in the mouth!
christen's friend brought him out on a yacht.
they went fishing and someone caught a huge snapper.
christen brought home a huge white snapper tail...
we only cooked half of it and still couldn't really finish it
we steamed half of the snapper tail HK style...
the metal plate is about 20" in diameter

went to NTUC at 9.30am and by 10.30am, we saw the supermarket PACKED like... some crazy festival or some panic buying spree! we rushed out by 11am.
managed to buy some fresh fish from AMK Hub NTUC:
(no pic of my fish or the wet market fish area at ntuc...)
-whole salmon, cut into fillets - @$1.39/100g, my fish costs about $35
-whole threadfin, cut into fillets - @$1.59/100g, my fish costs about $32
-stingray wings cut into square pieces about $19
-kee fish x3 fishes, gutted - total $7
-dodo fish balls x2 @$1.70 each
also bought
2 whole chicken,
eggs,
veggies,
rice,
& detergent - breeze power clean, bleach, powder soap.
LUNCH:
so for lunch, gathered the 2 fish heads and fish bones to cook up.
Recipe: Fish bones and head with taucheo, chilli, garlic
fresh fish head & fish bones
fresh fish belly and wings
rempah:
-taucheo
-2 big red chillis
-1 big green chilli
-garlic x15
-sng buei x3 big sour plums
-thick black sauce
-fish seasoning (lee kum kee)
-water to make into a gravy
1. season fish head and bones with salt & pepper.
2. coat fish bones/head with corn starch and fry. set aside.
3. use same oil to fry rempah.
4. pour rempah over the fried fish and bake in the oven for about 10 min 150-180 degrees
5. serve hot with rice
notes:
this seems to be a short cut for steamed fish sauce.
but i prefer to make mine from scratch
i would use
light soya sauce,
garlic oil,
shaoxing wine
and a pinch of sugar.

my thoughts about 2020 and upcoming year 2021...
everyone is hoping for 2021 to be a better year - many see 2020 as a horrible year. but i think 2020 was not only interesting, it gave us a wake up call, urging us to grasp the opportunities and choose our priorities better.
covid19 started sometime 2019, but 2020 is when it hit our shores and locked us indoors. 2020 is also a time to see how the West struggles with racism, democracy, polarization, free speech, economy & loss of jobs - in America, there's Trump & their election - that makes people shake or scratch their heads. in europe, there's brexit for uk, assassinations in france from religion-related issues provoked by the Charlie caricature, and rebellious crowds during covid, with those refusing to wear masks, social distancing or crowding at the beaches. in Oz, the PM keeps throwing words carelessly against china, claiming that it's his right to speak up and stand up for the country's "values" - this makes asians shake and scratch their heads as well... i can't help but think how selfish, inconsiderate and entitled the west is now. i can see why china feels bullied before and now try to assert its own values, stand their own ground. don't think i'm pro-china or biased against the west. i'm just losing respect for the west's so-called "values", where they seem hypocritical and self-centred. the world has not gone crazy. the world is beginning to fall apart because people don't want to focus on working together for the common good or goal. to simplify, unity and harmony are key, but these are completely ignored.
yes, i guess i do wish that 2021 is a better year. but i also need to re-define what "a better year" will mean to me :)
