i guess after cny month comes a month observing "a full recovery from gluttony" haha! the eating was a bit too much this year. and i think i'll try to use the month of march to eat simply and healthily - a time where food needs to help in overall health recovery and rejuvenating one's well-being. and yes, i just regurgitated a bunch of bullshit LOL

i suspect my lack of "balance" is throwing my appetite off, making me feel a tinge "weak". i suppose i will need to have a balanced yingyang or "hot/cold" diet then. 

am craving simple, clear, clean and nutritious food. hopefully more soups, possibly teochew porridge and some flavoursome simple home cooked light-tasting "cheng" or 清 dishes.

corn beef!! missing a fried egg here but who cares!! 
i miss cornbeef!!




30 March 2021 tues
breakfast - something so yuck that i didn't regret that i hadn't finished my food
lunch - homemade meatballs, celery, long beans with egg and chye poh
dinner - too full!! ate too much for lunch and had pastries in between hehehe




29 Mar 2021 mon
late tea at tiong bahru bakery after a very unpleasant afternoon at sgh (jac's cancer appt)
jac had sausages with egg, a bun, veggies (potatoes, mushrooms, tomatoes) fried with onions, fresh rosemary and a mexican tomato dip on the side - it was a big plate and was pricey but very nice.
hardly had dinner, was too full!

chicken wings with garlic, soya sauce and shaoxing wine!!



Recipe - Chicken Wings 
cooked with Garlic, Soya Sauce & Chinese Wine

1. Season chicken wings with salt, white pepper, light soya sauce
2. Heat up wok/pan, fry chicken wings to brown
3. Add 15 whole garlic into the wok and cook
4. Add shaoxing chinese wine and stir fry
5. Add fragrant light soya sauce and stir fry
6. Stir fry till chicken wings are cooked
and then serve hot (with or without gravy), 
sprinkle freshly chopped spring onions & red chillis
and enjoy with fragrant steamed rice

omg i haven't had this for such a long long loooong time!

Lunch - tabao pastries & cake from origins and bloom, mbs

late lunch - fishball, stuffed beancurd skin in soup, veggies & rice
dinner - shaved ham, bacon & eggs with tomatoes, cucumber on buttered toast - nice!!

breakfast - didn't feel well, so had pork porridge 
lunch - japanese yakiniku bbq & katsu don for lunch at casaurina!
dinner - kiam chye soup with pork ribs, prawn roll (hae zork), roast chicken with paprika

Breakfast
porridge with minced meat balls, pork liver and an egg. so good and comforting!!


since aidan coming home, bought some kiam chye and garlic

so we used the oven toaster to grill our chicken maryland 
(and one small chicken wing)

Recipe - Roast Chicken seasoned with
- Smoked Paprika powder, 
- Salt & Black Pepper, 
- Oil, 
- Garlic 
- Lemon Juice

breakfast - been a while but today decided on mee pok dry even tho i didn't feel like having any. it was good tho and i ate it all up!

Dinner - cooked 2 yellow croakers - 
puah jiang zhi (fish cooked in soya gravy)

Recipe: Fish in Ginger and Soya Gravy (puah jiang zhi)
- fry fish, set aside
- fry ginger, garlic and red chilli
- add soya sauce and then chinese shaoxing wine
- add water and boil, add in the fish to stew
- serve hot with spring onions and coriander

for brunch, had porridge since i didn't feel too well




8 March 2021 dinner
bought a fresh seabass from ntuc amk hub this morning.
the fish was $7.43 ($0.99/100gm), size quite big, 
almost the size of a small 22inch wok.


Recipe Salt Baked Fish (Sea Bass)

1. Season the cleaned stomach of the fish with salt & white pepper 
(this time i used a seabass)

2. Stuff pandan leaf x1 pc, and onions or spring onions. 
(optional) stuff chopped chilli

3. Oil the wok. 

4. Wet salt with water and mix (i used only one packet of salt)

5. coat the oiled wok with a layer of salt 
- make a bed big enough for the fish

6. place the fish on top of the salt bed 
and then cover the fish with a layer of wet salt

7. cover the wok and turn the fire on.

8. bake the fish for 7-15min depending on size of the fish 
(around the same timing as steaming a fish)

9. remove the salt and skin of the fish

10. enjoy!! use the nam jim seafood sauce as a dip for this fish.

so we had beef for lunch and dinner!
- golden coin with nam jim chilli garlic lime sauce
- ribeye steak with onions
- knuckle beef stir fry with HP & tomato sauce, garlic, chillis and onions
- mixed boiled potatoes, carrots and frozen veggies 
seasoned with melted butter, salt & pepper

6 March 2021 sat dinner
so i cooked beef golden coin in a soup for half a day on fri (yesterday) but didn't get to eat it till today Lol it goes so well with the sauce that's quite like the teochew sng mi chou chilli sauce.


Recipe - Beef

1kg golden coin beef, 
slow cooked in room temp water

seasoned with 
- salt, 
- white/black pepper, 
- fish sauce, 
- light soya sauce, 
- brandy (i used cordon bleu), 
- rock sugar, 
- crispy fried garlic, 
- whole shallots x10, 
- whole garlic x1

keep overnight in the fridge. 
do not heat the beef. 
slice before serving, eat cold with nam jim sauce


Recipe - Thai Nam Jim Sauce
actually this is a seafood sauce but it goes very well with beef

grind/pound together
(adjust proportions according to your taste)
- red chilli / chillipadi x1
- green chilli / chillipadi x1
- garlic x3 big
- coriander stems

grind the above and mix below to taste:
- fish sauce
- lime juice
- sugar or palm sugar


thai nam jim sauce

Recipe - Teochew Sng Mi Chou 
(teochew chilli garlic vinegar dip)

Grind these ingredients
- red chilli
- garlic

season with 
- chinese rice vinegar, 
- light soya or salt 
- and optional - sugar
