Recipe - Roast Chicken seasoned with 
- 5 Spice Powder 1-2 tbsp
- Honey 1tbsp
- Black Sauce (sweet type like chicken rice sauce) 1tbsp 
- Light Soya Sauce x1tbsp
- Salt & Pepper to taste
- Shaoxing Wine 1-2 tbsp
- Oil 1tbsp

Beef Ribs! 
with beef balls, canned button mushrooms and carrots.
(forgot to take pics of the beef ribs from 628 market)


Recipe - Beef Ribs Stew

1. Beef Ribs (or Brisket) seasoned with
- baking powder & salt to taste
(beef ribs $14/kg, i bought 1kg today)

2. Stew beef in slow cooker or crockpot
- add water to cover beef ribs
- salt, light soya sauce, dark soya sauce
- japanese soya sauce, fish sauce
- white & black peppercorn - crushed
- shaoxing chinese wine
- mirin
- raw sugar, about 1tbsp
- tung gui x1pc
- shallots x8
- garlic x1

2. add various favourite ingredients 
to make stew more interesting
- beef balls with tendons
- carrots
- button mushrooms
- peas or potatoes or pumpkin or corn, etc

3. re-season stew with
- mirin & shaoxing chinese wine
- salt to taste

4. thicken with cornstarch slurry

5. garnish with 
- chinese celery (keng chye), 
- coriander, 
-spring onions
- crispy fried shallots and/or fried garlic

and serve hot with steamed white rice
(remove oil by cooling the stew 
and skimming oil from top of stew)

1. stir fried minced beef 
with potatoes and dark soya sauce (chicken rice type!)

Masala Chicken, 
mango salad and 
Japanese Cucumber Salad


Recipe - Japanese Cucumber Salad
1. add salt to cucumber till water is released from the cucumber
2. rinse salt off the cucumbers and strain dry
3.  add dressing to cucumber & sprinkle with toasted sesame seeds

Dressing
- 1 tbsp sugar
- 1 tbsp japanese soya sauce
- 1-1/2 tbsp rice vinegar
- 1-2 tbsp sesame oil


Recipe - Masala Chicken
Mix the Marinade and Cook with Chicken
- alagapal curry powder for meat/dagang
- garam masala
- ginger garlic paste
- onions
- green chilli
- fresh coriander
- tomatoes


Recipe - Mango Salad
- plum sauce
- onions
- fresh coriander
- light soya sauce or thai fish sauce - a little
- sesame oil - a little
- (optional) thai sweet chilli sauce 
- (if mangoes are not sour) lime juice

roast chicken with roast potatoes, carrots and tomatoes!
even had cabbage, potato, carrot soup 
and steamed tofu and sweet peas.
very yummy!

17 May 2021 Dinner
Aidan got some salmon from a friend. 
so we cooked 2 pieces of salmon. was yummy!


we cut each piece into 3 thinner steaks. so we had 6 pcs.
here is a pic of 2 pieces since i joined the dinner table after dinner had started LOL 












also cooked minced pork with salted szechuan vegetables - 
OOOOOPS!!! forgot to take a pic.
it was so yummy!!

Recipe - Sze Chuan Vegetable with Pork Mince

1. Pork mince - seasoned with 
- salt, 
- light soya, 
- white pepper, 
- shaoxing wine
- cornstarch 
- garlic oil

2. in a hot wok - 
fry garlic, red chilli slices and onions

3. add pork and fry till dry

4. add sliced salted sze chuan vegetables
(soak in water till less salty if the veggie is salty)

5. fry till fragrant and serve hot with rice
best to have spring onions and coriander to mix in before serving

Braised Pork with

roast belly pork $5
pork skin $2

cooked these in a pot with the gravy provided when i bought the sio bak (roast belly pork) and pig skin. having this for dinner. unfortunately, we added too much vinegar today, so the pork gravy has a bit of tang haha!!

i was gonna add the tau kuah and fish cake but since the sauce is a bit sour, i will serve those separately!


roast belly pork $5
pork skin $2

braised together with:
gravy x2 packets
dark soya sauce from chicken rice stall
white peppercorn
fried crispy garlic
shaoxing wine
a few drops of rice vinegar

my fav part of the beef is the oxtail! 
would be great if i made oxtail for others. well, could be my next job haha! 
i've made oxtail stew (tomato base) for miau kwee when i was sec2 or sec3, before she stopped eating beef. and well, i remember in the 1980's and 1990's, yim may used to like it too, and her dad used to ask for me to cook extra so he can keep the stew and eat one piece of oxtail every day till the stew is finished LOL i heard that he used to reserve a seat at Shashlik restaurant every wed to eat oxtail when they had the wed lunch special. heard there was a queue for oxtail stew at shashlik and even at jack's place - both restaurants had it only once a week for set lunch. at Shashlik, people would reserve their seats in advanced and it used to be sold out within an hour at the jack's place restaurant, orchard road branch (i think this was the only branch with oxtail stew).

i've been cooking it since secondary school. then, i use tomato paste and slow cook the stew for hours with canned button mushrooms, carrot, potatoes and onions, and used plenty of white & black peppercorns to flavour the soup/stew. always rewarding at the end of the many hours of slow cooking! unless of course, i burnt the stew when i was a teen. that sucks haha!!

Recipe: Beef Soup - Simple

1. prepare beef
oxtail, golden coin or any other beef cuts for soup
remove the blood after soaking in water for a few minutes

2. slow cook the beef 
in room temperature water and add:
- shallots x8 - x10
- garlic x1
- tang gui x1-x2 pcs
- salt to taste
- light soya sauce (fragrant types are better) 1-2 tbsp
- thai fish sauce 1-2 tbsp
- white & black peppercorns 1tbsp each
- sugar x1tsp
- shaoxing wine or brandy x2-3 tbsp

breakfast - i had the "1000 year porridge" for breakfast haha there's no such thing as the thousand year porridge, i made up the name. it's just leftover plain porridge with all the leftover dishes heated up together for a meal! sorry. it was so good i forgot to take a pic :((((

lunch - briyani from amk central. well, since i stuffed my face with a medium sized bowl of porridge at 10.30am, i could hardly eat lunch, even at 3pm. i had about 1-2 bowls of briyani rice. good thing i ate just about right and then made some hot pu-er tea... yup tummy feels good!

dinner - 

fried fish recipe

1. batang fish seasoned with 
- fish sauce, 
- light soya, salt, 
- white pepper, 
- chinese wine, 
- cornstarch 
- and garlic oil

2/ seasoned batang fish is dipped into beaten egg, 
coated with breadcrumbs, coriander & chinese celery,
pan fried and grilled till crispy

so good with hot fragrant rice!!

lunch - popiah - hands too messy so no pics LOL
dinner - teochew porridge with side dishes:

1. omelette with long beans, carrots and onions,
2. chicken thigh meat stir fry with ginger, garlic, oyster sauce,
3. kangkong fried with fermented bean curd,
4. pickled lettuce,
5. preserved olive vegerable (bottle pic below),
6. popiah filling - bangkuang and bamboo,
7. and boiled a chicken soup with one whole chicken griller 
(2 frozen chicken grillers for $5+ from ntuc)




can't decide which photo edit i like best 
so i added them all here! hehe

i dip the chicken in a salt, white pepper mixture
so yummy!! seriously!



Chicken Soup Recipe
whole chicken
salt, 
crushed white peppercorns,
shallots x4,
garlic x1,
dried scallops x8 to x10pcs
japanese fragrant light soya sauce,
shaoxing chinese wine, 2tbsp or 1/2 cap 
(use the cap from the chinese wine bottle)

getting lazy these days. 
bought some chicken feet, mushroom hor fun for lunch but only managed to eat up half of the portion. didn't feel well these few days - giddy spells, freaking loud buzzing sound in my ears and terrible appetite.


at the market, i bought some roast pork $5 and braised pig skin $2. these cooked food come with a concentrated dark sauce gravy which you can use to further braise your pork meat.

Recipe - Fish Soup

1. season batang or tengiri fish slices with
(can also use snapper or grouper fish)
- salt, 
- white pepper, 
- light soya sauce, 
- shaoxing wine, 
- cornstarch 
- oil/garlic oil
- sliced fresh ginger

2. then boil seasoned fish in chicken stock or 
stock made with mixed powder - 
(grind roasted ikan bilis & dried ti poh into powder)

3. serve hot with spring onions 
& a dip made with cut chillis in light soya sauce

had some leftover plain chicken soup
(chicken bones boiled in water, seasoned with salt & pepper)
so made some porridge for breakfast using leftover rice.


since i didn't have any minced pork or chicken or veggies or leftovers,
i dug into the freezer for veggies & meat.
found 4 chicken frankfurters and frozen veggies Lol

quick porridge - Recipe
1. boil chicken stock with leftover rice
2. add any meat or seafood and any veggies
3. add white pepper & salt or light soya to taste
4. add aromatics (optional and only if available)
aromatic oil - shallots/garlic oil, sesame oil
aromatics - crispy fried garlic & shallots, spring onions, coriander

this is my porridge today. also made a bowl of porridge for christen who is at home for online classes.


our special 1000 year porridge
funny thing. years ago, we had some leftovers from the meal before - we had porridge with some side dishes the night before. so i poured them all into one pot and made a porridge for breakfast. i told jannah that i call it the 1000 year old porridge hahaha!! she loved the porridge and kept asking for us to make it again. i must have done it one other time but not any more as we don't crave for porridge that much LOL.

i had leftover lamb shank stew gravy, so i just added some taiwanese whitejade noodles in and cooked them together. turned out to be quite tasty (it was super salty since i boiled the gravy down to less than half of the original amount) - and, since i ate too much of it, i felt sick afterwards uggggh!!!

Pork Chop Recipe
lean pork coated with plain flour, 
then beaten egg, 
then crushed breadcrumbs
and fried till cooked, golden & crispy

Thai Salad Dressing - Recipe
also made more thai salad dressing with 
- raw sliced onions, 
- chopped red & green chillis, 
- coriander, 
- lime juice, 
- sugar, 
- fish sauce, 
- light soya sauce

Beef Knuckle - Recipe

1. beef knuckle seasoned with
- salt, 
- white & black pepper, 
- light soya sauce, 
- mirin or shaoxing wine
- baking powder, 
- little water, 
- cornstarch 
- oil

2. fry in a hot smoky wok :) 




smoky wok BBQ flavoured knuckle beef 
with thai dressing (below) 
and hot steamed rice...

Dinner - Lamb Shanks!! 
i got 3 for $25 ($20/kg), 
didn't think 4 would fit into my pot LOL
we only managed to finish up 1 shank. 


Recipe - Lamb Shanks Slow Cooked

1. Lamb Shanks x3 
(more if your pot can hold!) 
- fry till brown

2. fresh herbs 
- bay leaf, 
- thyme 
- rosemary

3. aromatics 
- shallots x10, 
- garlic x10, 
- orange & lemon peel (avoid white part!) - 2-3 tsp

4. seasoning 
- salt, 
- freshly crushed black & white peppercorn, 
- light soya sauce, 
- chinese wine or mirin or brandy - 2-3 tbsp

5. roasted veggies
- tomatoes, carrots, potatoes, onions

6. slow cook in vegetable/chicken/beef stock or water
(i used veggie stock - boiled potatoes, carrots, cauliflower, brocoli, etc) 

Below Optional 

a) -  tomato paste or stewed tomatoes

b) - red/white wine 
(only if you have red/white wines. 
lamb already tastes good without these wines)

c) - thai dressing 
(mix lime juice, fish sauce, light soya sauce, sliced onions, 
pounded garlic, chopped red/green chillis, fresh coriander)

Lunch - Fried Chicken drumsticks
boiled the chicken drumsticks before coating it with breadcrumbs and flour, then pan fry till crispy! tini is now an expert doing this... i can't even do this myself!
