101. Our Food Diary - & Missing Mummy - Sep to Dec 2021

13 Nov 2021

this is difficult.

we just lost mummy to cancer.

thought i'd just show how random and neglected our meals seem to be during the time mummy is in hospital, after she passed on and the rest of the year trying to adjust to changes.

one of the other change is that we have no more live-in domestic helper. tini went home 30 sep 2021, 2 days after mummy was warded in hospital.

another change is that i'm so exhausted that i had a gum infection that lasted for weeks. also had swollen and painful fingers - couldn't even hold my cup or plate or shower or do anything "simple".

most of all, it's adjusting to jamie's diet plan - no carb, no sugar, bitter papaya leaf drink, blah blah blah

11 Nov 2021

below: Jamie's salad - think he said he spent 3 hours cutting and preparing this lunch
avocado, pounded garlic, celery, onions, fried egg, ham, tomatoes, coriander, lime juice

this is like a guacamole.

it's the filling for his low carb, low GI wrap with extra romaine lettuce, sliced cucumbers and fresh coriander leaves.

Lamb Ribs - given by lim tzur ko ko

LAMB RIBS
Seasoned just before cooking
(meat shouldn't be cold before cooking,
take out from fridge to rest in room temp about 1hr before)

1 - 1st - rub mustard over lamb.
didn't have dijon mustard so i used wholegrain mustard.

2 - then sprinkle salt & black pepper, chopped rosemary and thyme

3 - add whole garlic cloves and roast with some water

4 - when lamb is almost cooked, rub a mix over the lamb
then roast/grill for another 5-10min to let the butter melt

5 - SPICE MIX
- fresh rosemary & thyme leaves
- salt & black pepper
- chopped or minced garlic
- olive oil or butter or both

From Roast Lamb to Roast Chicken!

i kept the gravy from the roast lamb,
left it in the fridge overnight,
then threw away the hardened oil layer the next day.
roasted a small half chicken with the gravy.

wow. sooooo good!!

12 Dec 2021 Sunday dinner
bought some frozen cod fish from ntuc
cod costs $36 (france, processed in china)

found a good time to steam one piece...
but since our lunch as late, none of us were that hungry to eat it ugggh

the cod was... soooo good anyways!
i'm pissed to find out that they dropped the prices today... 19dec2021 - BUT it's also out of stock!

cod fish steamed hk style (below)
didn't dare use red chillipadi - too bad i didn't have any big red chillis

also cooked minced chicken cutlet with 2 eggs (good thing i only made 1/2 a packet...) and made some tomato eggs with 4 eggs and 4 tomatoes (and tomato egg photo came out blur arrgh!!)...

all of these dishes could have been tastier...
- if everyone was hungry
- if i were not exhausted
- if i didn't struggle with the pots/pans/cooking utensils/prep
- if i was in the mood to enjoy cooking :/

for late lunch we had zhi char from chang kee at home at about 2-3pm...
- sweet and sour pork
- pork ribs (pai guat wong)
