first attempt cooking this from scratch!
blended and fried the soto ayam rempah yesterday and cooked the dish today,
not difficult, so exciting!
caught up with cooking it that i forgot to take some good pictures :(
i thot i did though... but realised i didn't take the pics i wanted

we finished the soto as well!

sliced grouper soup $9.50 +50 cents bittergourd
dinner - bought red snapper and toman fish from ntuc
Recipe - fish with ginger and soya sauce
1. soak sliced fish in salted water and shaoxing wine
2. remove liquid and coat fish with cornflour
3. fry the fish till golden
4. add sliced ginger, garlic and onions to the fish and fry till fragrant
5. add a soya sauce, shaoxing wine, white pepper
(can use the lee kum kee soya sauce for steamed fish)
6. add and stir in spring onions, red chilli, chinese celery, coriander
7. serve hot

Recipe Roasted Pork - Sio bak
- boil pork belly, cover and let it rest
- poke holes in the skin,
- then season skin with salt, vinegar and garlic oil
- leave to dry in fridge - roast till skin crust is crispy

- chicken or pork
- garlic x3-4 - chopped
- onions x2 medium - chopped
- red chilli x3-4 - optional - chillipadi
- white pepper corn x1 tbsp - crushed
- bamboo shoots
1. fry garlic, onions, red chillis, crushed white pepper corns
i used lard oil today :)
2. add pork/chicken and fry
3. add water and bamboo shoots, then braise till meat is tender
4. season - salt, fish sauce, light and dark soya sauce
5. optional - chicken stock
serve hot with steamed jasmine rice!

dinner - cornbeef yum yum!
tempe - so crispy i didn't add it in my sambal goreng
sambal goreng with no sambal haha, only use dark soya, oyster and sugar
when i first cooked the sambal goreng, it tasted like tom yum!
so i ditched the tom yum sambal and just fried with dark soya, oyster sauce and sugar

1. fry tauhu and tempe till golden
2. fry long beans / french beans
3. fry chopped garlic, onion, red/green chilli, ginger, serai
4. add oyster sauce, dark soya sauce
5. add fried tauhu, tempe, long beans, cubed tomatoes, limau purut leaves
fry until ready to eat and serve hot!

Recipe - Babi Pongteh
1. season pork with salt, pepper and dark soya souce
fry potatoes and pork till brown
2. fry chopped onions, garlic
and prepared chinese mushrooms,
then add tau cheo 1 tbsp, fry till fragrant
3. add pork and fry till brown
4. add gula melaka - 1 tbsp, light & dark soya sauce
5. add water and braise for 1-2 hours, till tender
6. serve hot with rice

this whole chicken came in parts - but i didn't find any chicken thighs, instead, i found the lower thigh with the bishops nose (the put put) - i found 4 put puts!!

but didn't bother to make the skin (wanted to use the vietnamese rice paper pancakes - so didn't bother as the duck went so well with rice!

9.30-10am breakfast and bought chicken rice, beef
11am+ prepared and cooked beef
12pm picked jamie from T1 aircport
1pm collected cakes then sent them to holland road
2pm+ lunch at serangoon market - jamie wanted zuzu kebabs
3pm+ settled 687B contract and started to prepare jannah's bursary application
6.30pm prepared dinner!!

- bought chicken rice for aidan, christen and jannah

- bought golden coin ($20) and one oxtail ($17) - total $37
- from 11+am, came home from market to slow cook beef soup
Recipe - Simple Slow Cooked Beef
1. clean and soak 1-2kg beef to remove as much blood
2. in slow cooker, add beef, beef stock cube (1/2) and water at room temp
3. season - salt, white and black pepper, shaoxing wine, light soya sauce sauce
4. add shallots x6-8, garlic x1 clove, brown sugar 1 tbsp
5. add fried garlic, fried shallots
6. slow cook for a few hours until the beef is the right texture
7. 1 hour before serving, add 2-3 pieces of dang gui
8. serve hot!

daddy and i had lunch at nex
dinner - fried kai lan 2 ways, bacon and eggs,
and leftovers - stew, curry, yong tau hu, fried potatoes carrots and onions

1. fry chopped garlic till fragrant
2. add oyster sauce and sesame oil - and fry
3. add baby kailan and fri
4. add chinese wine, let it sizzle
5. serve with hot steamed rice and cut chillipadi

brunch -
fried kuay teow with egg and bittergourd
dinner
- prawns with garlic and butter
- chicken thighs and baby kailan with chopped onion, red chilli, garlic, oyster and mountain soya sauce
- leftover chicken chop cutlet - 3 pieces
Recipe - Prawns with Garlic and Butter
1- in a very hot/heated wok/pan, add salt
2- add cleaned prawns with shells and roast
3- turn prawns over and roast the other side
4- add butter, about 1 tbs
5- add chopped garlic
6. stir fry till well mixed and cooked
7- serve hot!
Recipe - Chicken and Kailan
1- in a hot pan/wok, add 1tbs oil, chopped onions and red chillis, fry till fragrant
(optional - can add red and green chillipadi also)
2- add chopped garlic and marinated chicken thigh cubes
3- add oyster sauce and mountain soya sauce, stir fry till chicken is cooked
4- add kai lan stalks and fry for about 1/2 min (fire is medium to high)
5- add kai lan leaves and stir fry till well-mixed
6- serve hot with steamed white jasmine rice

Meatball mixture:
- pork minced - seasoned before adding fish paste
- fish paste (bought ready made - ntuc or wet market)
- chopped fresh prawns
- water chestnuts
- ti poh powder
- chopped spring onions and fresh coriander
- finely chopped garlic
- fried shallots and garlic (bawang goreng and crispy fried garlic)
- oil used to fry crispy garlic or shallot
- white pepper
minced pork seasoned with
- salt, white pepper, light soya sauce

i bought frozen beef from amk 628 market
- golden coin $37 (@$22/kg) & beef tendon $4
1.68kg for 4 pieces of beef - i cooked about 2.5 pieces
also had rice with crispy fried whitebait fish!!
i forgot about the baby sotong/squid in the dried fish and fried everything.
can't find the sotong/squid in the mix though Lol, think someone ate it already!
Simple Beef Soup
my slow cooker is around 3-4L
beef is covered in water at room temp and then i turn the power on
i put on high heat for around 3-4 hours
- beef golden coin or oxtail (i find brisket a bit tough)
- beef tendon x1 piece
- optional: beef ball (add in before serving)
- red shallots x6-8
- garlic whole x2
- red dates x4
- dang gui x2 slices
- salt, crushed white and black peppercorn
- light soya sauce
- fish sauce
- rock sugar or sugar x1/2 to 1 tsp (agak agak)
- fried crispy shallots and garlic
- chinese shaoxing wine 1-2 tbsp
beef soup is taken with noodles or steamed jasmine rice
- noodles - kuay teow or laksa bee hoon or u-mien
- bean sprouts - scalded lightly in salted water
- fresh chinese celery, coriander - chopped
- fresh cut red and green chillipadi in light soya sauce
- fried crispy shallots and garlic - for topping
