Recipe - Instant Noodles with Kim Chi
- fry pork or beef or chicken, garlic, onions
- add kim chi and 2 tsp gouchujang paste and fry till fragrant (don't burn)
- add stock or water
- add instant noodles & veggies, spring onions, green & red chillis, egg
- serve hot!

Ma Po Toufu with Beef Minced for Jannah and Me!!
Recipe: Ma Po Toufu
- Dou Jiang - chilli broadbean paste (abt 2 tbsp)
- lao gan ma - chilli crisps (abt 4 tbsp)
- ginger - chopped (abt 4 tbsp)
- garlic - chopped (abt 4 tbsp)
- beef minced
- light & dark soya sauce
- sugar 1/2-1 tsp
- chinese black vinegar
- sesame oil
- shaoxing wine
- soft silken toufu cut and boiled in salted water, drained
- topped with coriander and spring onions

Prawn Stock for Prawn Noodles
Hae Mee Soup
Hae Mee Soup (Prawn Noodle Soup)
Prawn Stock
Ingredients:
- prawn shells & heads (from 2kg of prawns)
- green chilli x2
- garlic - chopped or whole x10
- dried chilli + hae bi (dried prawns) + roasted belachan - grind into a chilli powder mix
- seasoning - fish sauce, salt & white pepper, rock sugar to taste
- bawang goreng (fried shallots)
- chicken or pork stock
- ikan billis powder mix
Method:
* In hot oil, add green chilli, garlic, sugar
* fry till fragrant & sugar is melted & brown
* add chilli powder mix
* fry prawn shells and head till the mixture smells like BBQ.
(prawn shells and heads should be as dry as possible to avoid boiling)
* add water or chicken or pork stock, ikan bilis powder mix
* boil the prawn stock till garlic is soft
* add seasoning & bawang goreng (fried shallots) to taste

Mushrooms
- chinese dried mushrooms
- canned straw & button mushrooms
- black wood ear fungus (2 types)
- fatt choy
Season with
- oyster sauce,
- salt, white pepper,
- shaoxing wine,
- sesame oil,
- a bit of sugar
- light & dark soya sauce (use the special blends if avail)
- fried garlic
- best to stew with chicken feet (big ones!) or abalone!!
- also good to stew with pig skin, chicken, 3-layer pork sa chum bak

steamed soya sauce chicken
broccoli in egg sauce
Steamed Soya Sauce Chicken
marinade:
- salt, white pepper
- light soya sauce
- dark soya sauce
- fish sauce
- ginger - 5-6 slices
- red shallots x4
- shaoxing chinese wine - a cup
- black woodear fungus x2 types
1. soak chicken in marinade for at last 1/2 a day
2. steam till cooked
Broccoli in Egg Sauce
- chicken stock (i used the chicken soup cooked for macaroni soup)
- broccoli
- carrots
- mushrooms, black fungus
- eggs x2 - beaten & seasoned
- chopped garlic
1. fry chopped garlic in oil, then fry veggies, put aside in serving dish
2. egg sauce
- cook soup, season with salt and white pepper, a dash of sesame oil and shaoxing wine.
- add cornstarch slurry, then do egg drop into soup
this forms a slightly thick gravy, switch heat off after dropping egg mix. egg will cook in heat
stir fried leftovers for breakfast
- macaroni, mee suah, chye sim, canned chunky tuna, apple cider vinegrette
- onions, garlic, fresh chillis
- wow!! so yummy!
apple cider vinaigrette
- raw garlic - pounded - fine is easier to mix into vinaigrette mix
- olive oil or vegetable oil
- apple cider vinegar
- honey
- salt & black pepper to taste

- salty kiam chye - soaked till not so salty
- pork ribs 1kg - i buy the frozen softbone, rib parts only for $9/kg
- pork balls ( i use lion dance pork balls - it has ti poh flavours)
- sng bueh - sour plums
- assam skin x3-4 pcs
- tomatoes
- silky toufu
- rock sugar
- shallots
- canned mushrooms
- fried garlic (try to remove as much oil as possible)
