i brought christen to the telok blangah rise market for breakfast. we had some soya sauce chicken hor fun and shui kao or prawn dumplings. he enjoyed his noodles! 

funny thing... christen loves chicken breast meat so we ordered the ordinary chicken hor fun (where we're so likely to get the breast meat) but the owner gave him a drumstick (which costs more, about $4) and the strangest thing is, christen hates chicken drumsticks most LOL

tabao a pack of Malay nasi lemak from Labrador Nasi Lemak & Nasi Padang stall. it had a very traditional nasi lemak taste - the sambal is not too sweet and exactly the right sweetness that i like, but the sambal is way too salty :((

waited for jannah at plaza sing. then we had lunch at a vietnamese place.
beef pho for jannah and some prawn/crab beehoon soup for me.

the food is a bit on the expensive side. but we were surrounded by women customers speaking vietnamese. so i suppose the food is either very authentic and/or they have a lot of support by their own people. how sweet!

bought some cooked pork from the 628 amk wet market yesterday.
- pig skin $2, 
- pig large intestine $3, 
- roasted belly pork $5 

the lot smells bad today yuck! 
so i boiled the pork bits in water, 
(pork bits = pig large intestines and pork skins)

a pot with pig bits and water,
added light soya sauce, 
chinese wine 
and rice vinegar. 
threw away the water 
and put the boiled pork bits into a new pot.

stewed the pork bits 
with the black sauce gravy from the market, 
thick dark soya sauce (from chicken rice stall)
fried crispy garlic, 
chinese wine, 
white pepper, 
light soya sauce 
and a pack of raw brown sugar... 

woahhhhh. my pork stew smells amazing!!

too bad my pics look... so bad ugggh



i guess it looks better in a bowl... ?

Chicken Rice day! 

Hainanese Chicken Rice from 628amk market

for lunch and dinner
- 1 whole chicken $24
- chicken liver x4 portions $2
- chicken rice x6 packets 50 cents x6
- fresh cucumber, archar, chilli sauce, ginger sauce, 
thick dark soya sauce, pre-mixed light soya gravy,

total: $29

tried the Mala Xiang Guo ready made chilli paste by Haidilao
i think the chilli paste is great but i didn't realize i used too much paste when cooking, so my dish was just too salty and too MALA Lol - ma (numbing) and la (spicy).

Recipe - Mala Xiang Guo

1. Haidilao's Mala Xiang Guo spice mix 
the packet comes with 2 portions in 2 separate packs. 
i suggest you use about 1/2 each time

2. meat 
- i used pork ribs from my soup

3. veggies of your choice 
- i used black fungus
you can also add toufu

4. noodles of your choice 
- i used glass noodles or tung hoon

5. aromatics - chop them up
- ginger 
- garlic
- onions
- spring onions
- coriander 

6. pre-cook veggies and meat, set aside 

7. fry aromatics. then add mala spicy paste. fry for a few seconds

8. add the pre-cooked meat, veggies etc. 

9. add water or stock and let it boil before you add the noodles
i used tung hoon so that it would soak up the liquid and make the dish a little drier but not completely dried up. my pic of the dish below looks dry but i do have about 1/2 pot of gravy at the bottom.

10 place into a bowl, add sesame oil, spring onions, coriander and serve wth hot fragrant rice!

it was so salty i added one bowl of water into the Mala dish.
next time i'll use half a pack for a dry version and full pack for steamboat.

altho i think the taste is ok, i'm not sure why i ended up not liking this simple fried bee hoon with a fried egg and ngo hiang (or meat roll). chilli sauce was ok too but i really didn't enjoy this breakfast. i'm not even sure why i would dislike it even though the food was ok.

DINNER
fried tung hoon 
with thai asparagus (thin ones), 
fried salmon

recipe below





Recipe - Fried Tung Hoon 
fried with garlic, red chilli & thai asparagus

1. soak tung hoon in hot water, 
then strain water,

2. season tung hoon with...
- mountain sauce, 
- light soya sauce, 
- oyster sauce, 
- fish sauce,
- sugar,
- white pepper,
- shaoxing chinese wine,
- fried garlic oil

3. boil thai asparagus in salted water,
asparagus stalks first, 
then later add the asparagus tips

4. in hot oil, fry garlic, chilli 
(and prawns/scallops if you have them!)
add seasoned tung hoon and some water
fry till tung hoon is al dente
add spring onions and coriander while hot 

5. serve with steamed fragrant white rice 
& a dash of lime juice!
i didn't have fresh prawns or scallops
so i used the fried salmon fish Lol

Recipe - Assam Pedas

Rempah
- dried chilli
- fresh red chilli
- belachan - roasted
- red shallots
- garlic
- tumeric (fresh kunyit)
- langkuas or galangal
- serai
- buah keras (candlenut)
- sugar

cooking ingredients
- stingray (ikan pari) or other fish like batang
- assam
- daun laksa (laksa leaves)
- daun kunyit (tumeric leaves)
- torch ginger flower
- veggies - brinjal, lady's fingers, bling bling fruit, tomatoes, pineapples
- salt to taste
- oil for frying rempah & fish

Breakfast porridge

on rainy mornings or when you just crave for a good bowl of pork porridge, singapore style, you'd wanna just order a bowl with your favourite ingredients.

i like minced pork balls. they're well-seasoned with salt, light soya sauce, roasted/fried tee poh (a type of dried fish) in powder form, sesame oil and maybe a little sugar. i prefer watery porridge while i see many prefer thick porridge, perhaps it's because i'm teochew. i also love to add a runny egg where i break the egg yolk and mix it with my porridge like what you see here. sometimes i add some century egg and/or pork liver and/or tender, seasoned pork slices. omg, how amazing, this looks like a simple bowl but i haven't even finished listing down what else goes into this bowl of porridge! toppings include tung chye, fried crispy shallots (bawang goreng), spring onions, white pepper, yu tiao or yu cha kueh and sometimes a dash of sesame oil. anyone could easily cook this at home but somehow it simply tastes better at the hawker centres or when you tabao/pack from the market! 

pork porridge stalls i like are the one from 628 amk, kovan, telok blangah crescent and the stall that used to be at East Coast road - where i've driven 1hr through traffic just for breakfast!

years ago, around 1980's-2010, i would drive all the way to the east area to have pork porridge at a coffeeshop called "Carlton" (one of the old coffeeshops along east coast road, near the catholic church, esso service station and katong bakery - the porridge stall moved once or twice along that stretch of road and the queue always followed LOL. the uncle never talks to anyone, being too busy cooking the porridge. his wife takes the orders and serves the bowls. there's always a long long queue and long wait. sometimes, they get their son to help serve the bowls of hot porridge (their son has down syndrome but is very helpful and pleasant). this stall also specialises in raw fish salad - seasoned very differently from many other stalls. i think they use a lot more raw onions, lime juice and chopped fresh red chillis. sometimes i think uncle uses a splash of tobasco sauce. i do like that they add a mountain of fresh, crisp strips of iceberg lettuce and fresh coriander. oh man, i miss this family's pork porridge and raw fish salad! those were happy days!

the stall is now closed and i don't think they have moved but have retired. 

i can't say enough how much i miss uncle and auntie's porridge and raw fish salad. they have amazing tastes. i've always suspected uncle uses tobasco sauce for his raw fish Lol i will try to make this some time... i think i know how to recreate this salad. but it only tastes a lot better when eaten together with the porridge - i must empty the sweet-sour-slightly spicy sesame dressing from the raw fish salad into the porridge. wow.

yesterday i made assam pedas with bling bling fruit from scratch. but i forgot to take a pic ha. so today i took a pic of the gravy... just the gravy man haha. but that gravy is sooooo good with hot rice!

breakfast - chwee kueh with chye poh and hae bi chilli sauce

pork chop with garlic, salt & pepper, 
oxtail soup & tomato stew, 
veggies, 
prawn with tung hoon

bought about 1.5kg oxtail $28 from the wet market


Recipe - Oxtail
1.5-2kg Oxtail slow cook with 
- onions x1 big, 
- garlic x1, 
- tang gui x1pc, 
- raw/brown sugar x1 tbsp,
- salt
- freshly ground white & black pepper corn
- light soya sauce,
(used 2 types of sauces - kikoman fragrant soya sauce & soba soya from diaso)

optional - Oxtail Tomato Stew
after oxtail is fall-off-the-bone soft, 
in a hot pan,
use oil from oxtail soup to fry onions and garlic,
add tomato gravy, carrots, potatoes, mushrooms and braise for about 5-10min
add tender oxtail and braise another 5-10min
serve with pasta or garlic/butter toast

Oxtail - Fall off the bone tender!


Oxtail in Crockpot on high heat for about 4 hours. 

you'll have the meat fall off the bone and sooooo tender! you can separate the meat from the bones and then season your meat lightly with salt & pepper, and if you like asian flavours use a little light soya sauce. have your oxtail meat with bread, toast, pasta, steamed rice, noodles or as is. 

how to cook this = 
Cover oxtail with water, add salt, white & black pepper, whole shallots or onions (basic clear soup recipe), slow cook for a few hours. 

to get rid of the oil, refrigerate overnight and throw out the hardened oil the next day. your soup will be oil-free!

oh, and cooking this dish makes your home smell nice too haha!!

Recipe - Pork Chop 

Shoulder butt pork chop - season with
- baking soda x1 full teaspoon
- salt
- white pepper
- light soya sauce
- garlic - freshly pounded into a paste

fry onions till soft, set aside
fry & brown pork chop till cooked
serve hot with fried onions

pork seasoned with salt, black pepper, crushed fresh garlic
onions are fried with little oil, salt and sugar

Recipe
Frozen Hokkaido Scallops with tung hoon

1. Scallops 
- defrost, drain liquid.
- season with salt, white pepper, fried garlic oil. 
- fry scallops to golden brown
- add shaoxing chinese wine
- stir fry for a few more seconds (high heat)
- set aside scallops
2. in hot oil, fry chopped garlic, red & green chillis, onions till fragrant
3. add light soya sauce and a pinch of sugar. when fragrant, add some water or stock.
(i used lee kum kee seafood sauce as it is pre-mixed. but u can mix your own sauce - see below) 
4. add tung hoon into the liquid, 
mix till tung hoon is well coated 
make sure you mix noodles well with the sauce and noodle is al dente. 
set aside.
5. add coriander and lime juice to the tung hoon noodles, mix well.
6. on top of noodles, add fried scallops. 
if too dry, add some sauce. 
(optional) add lime juice

Serve hot!

pre-mix sauce for frying tung hoon
- light soya sauce, 
- fish sauce, 
- chopped red and green chillis, 
- sugar
