another year, another food journey
getting used to cooking on my own
getting used to planning more efficient meals

no mummy and no helper.
just me trying to go market, plan and cook meals.
at least jannah and christen help to do the dishes, 
sometimes help prepare veggies or set the table,
aidan does the laundry,
and daddy seems to enjoy some of the food.

this year, 2023, i might want to try more elaborate dishes,
like peranakan and malay dishes... or not.

i need to practice making nonya dishes...
will take a while to tombok rempahs.

bought one ikan kurau head cut into pieces for $10
(uncle closing shop so trying to sell off)
made a fish stew/soup, teochew style







also bought some dried whitebait or silver fish from the provision shop
2nd buy - it was so good i bought a lot more!

- fried white bait fish till crispy
- fried ginger and fish roe, fish liver
- fried ginger and yellow croaker fish - 2 sides
- then fry ginger slices, garlic, chilli, spring onions, chinese wine, add water and soya sauce, pour gravy over fish

soak in water for 5min,
rinse,
wash in water 2 more times
(no need to soak)

fry till crispy - nice!!
(i added limau purut leaves and before dishing out, added garlic slices)

then went sg swimming club for buffet lunch

we had noodles at redhill outlet, pasir ris, jannah had pizza later

drove daddy to and fro a wake (uncle kok swee's daughter),
waited at holland road, then tabao for dinner

late lunch - mee goreng & brinjal (shouldn't have used hae bi), leftover stew






3 June 2023
made a huge pot of chicken stew!
used 1/2 fresh chicken and 800g drumstricks to make the stew

also cooked mee goreng
surprisingly, a simplified mee goreng with limited ingredients tastes so good!

Recipe - Mee Goreng (simplified)
1. fry eggs, set aside
2. fry onions, garlic and chillis
3. add chilli paste, oyster sauce, light soya, dark soya sauce, tomato ketchup
4. add yellow hokkien noodles (sek mee)
5. fry together, add eggs, spring onions, chinese celery, coriander
6. serve hot with fresh lime on the side




Recipe - Chicken Stew

1. fry onions, garlic, potato, carrots, button mushrooms 
- add salt and white/black pepper

2. Fry chicken till brown, then add sauces
- tomato ketchup, HP sauce, tobasco sauce
- oyster sauce, light and dark soya sauce
- salt and pepper

3. add water or stock and stew for 15-30min 
or until chicken is cooked well

Add green veggies and then Serve hot!

a few days before cooking my fish, i bought a lot of fish from amk hub ntuc and 628 market.

ntuc - 2 whole fish - threadfin and batang (plus fish roe!!!!)
628 - $13 whole red snapper (ang guei 红鸡) - daddy says this fish is super good!

batang with turmeric powder is always nice! 
fish roe was amazing!!

dinner - cooked a lot (no pics)

- leeks with tau kuah and eggs and tung hoon
- chicken nuggets, you cha kauh stuffed with sotong ball
- leftover black pepper pork
also had cake and fruits and some jelly

yesterday after lunch at changi, we went to Giant tampines
bought some veggies and fresh red snapper fillets!! 
so excited!!

so cooked them today - boiled in soup
(because i forgot to wash off the salt after soaking them in salt!)

- steamed minced pork - very nice! but no pics
- 3 pc red snapper fish with butter and wholegrain mustard + water
- 1 pc red snapper fish in fish stew gravy

Recipe - Butter Mustard Fish
1. fry garlic, set aside
2. add butter, add mustard (i used wholegrain mustard) and water
3. cook fish in gravy and season with black pepper, salt if needed
4. add veggies if you've prepared them - i used carrots, potatoes and onions
5. serve hot!

- fish maw soup
- hokkien black noodles
- fried string beans

temperature was 38 degree celsius - super HOT!
sky was blue and bright, great for photos!

lunch - shared a turkish bbq chicken salad with daddy
dinner - cooked a lot!
- chicken with salted fish
- toman fish in black bean sauce
- fried crispy salted ikan kurau fish! er no pics for this :/





dinner - 

Recipe - toman "snakehead" fish xi chap

1. fish slices soaked in salted water for a while - the fish meat will be slippery and smooth
2. season with shaoxing chinese wine, ginger, sesame oil, light soya sauce
3. prepare xi chap mixture - chop the following:
- salted black beans
- garlic x1-2 cloves
- ginger - 2 inch, or about 10-15 slices for chopping
- red and green chilli - 1 each
4. fry xi chap mixture in oil (add more oil) - until fragrant
5. add oyster sauce, fish sauce, light soya sauce,
shaoxing chinese wine, sesame oil and cook together
6. add the fish to cook in the sauce/mixture, add dark soya sauce for colour
7. add some stock or water and boil a little till fish is cooked and coated
optional - add slurry if you want a thick sauce
8. switch off the fire and stir in shaoxing wine, fresh spring onions and coriander leaves
9. plate the dish, drizzle with sesame oil
10. add more fresh herbs/red chillis for garnish and serve hot


Chicken with Salted Fish
since i used frozen chicken that's thawed only a little, i braised the chicken and then grilled them.

ingredients
- salted fish - fried, set aside
- fry ginger, garlic, onions and chicken
- season with oyster sauce, sesame oil and shaoxing wine
- add salted fish pieces and water or stock to braise till chicken is cooked

lunch - steamed fish and char siew, sio bak from circuit road hawker
dinner - leftover sausages + $10 char siew, sio bak tabao from circuit road + leftover pork ribs + freshly cooked kiam chye soup with pork ribs - jannah ate up all the soup and pork ribs! no pics :(

seasoned with tomato ketchup, hp and oyster sauce, salt and lots of pepper
so good!

daddy and i went to amk 409 market - 
most stalls were closed and we tried fish soup and noodles...

so i braised it with anyhow sauce and sliced into thin pieces
wah so tasty!

it's nice but the stall's hospitality is kinda cold :/

Recipe - Black Pepper Sliced Pork
1. season pork, tenderise with baking powder if needed
2. fry onions, garlic, pork
3. add plenty of black pepper, 1tsp of sugar, dark soya sauce and cook
4. add some water if needed
5. serve hot!!

ntuc sells pork liver all sliced nicely. also quite clean and affordable.
so i  cooked pork liver with ginger and spring onions a few times
the version where i boiled the liver before frying resulted in a clearer gravy.

then i passed a fishmonger and saw whitebait, 
so i bought whitebait! $4 ($3 per 100g)
also bought this ang sai fish (emperor red snapper).
made a stew and kinda steamed the ang sai in the pot.
wahhh. soooo yum!

celebrating Aidan's birthday - nam kee chicken rice for lunch and dinner










15 April 2023 Sat

9am - went amk hub to get some onions, garlic and ginger - and i forgot to get the garlic, ginger wasn't great, so no garlic and ginger :/ 

also got some batang fish $24+ and 2 kee fish $9+, fish balls x2 packets and some veggies.

after ntuc, went to 628 and ate mee siam, chin chow drink - quite nice! bought minced beef, sio bak $8, and got my ginger BUT forgot the garlic :/ uggh (later i found some insects living in my ginger. ewww sooo gross!!)

came back around 11.45am and started to clean up my fish and cook lunch. by the time i'm done, it's 3pm! geez.

lunch - 
kinda disorganized but finally grilled the sio bak, made the leftover rice hot, then cooked a pot of fish soup! omg, my soup is as good as what's sold at the shops!

dinner - 
roasted chicken with garlic powder and lemon juice. but i think my lemon's almost spoilt... uh, hope i won't get sick!



batang fish, cut into 8 small fillet pieces
i then cut about 4 fillet pieces into bite pieces and slices.




marinated batang fish for soup
- batang fish slices (bones removed) - 
fish was soaked in salt water, then remove liquid 
- learnt this from the fishmongers when i lived in woodlands
(fish meat will become slippery and smooth!)
- salt and white pepper
- shaoxing chinese wine
- ginger water, sliced ginger
- light soya sauce
- fish sauce
- sesame oil
(remember, no need cornflour)




Recipe - Batang Fish Soup

1. Slice batang into bite sized pieces, remove bones

2. marinate batang fish for soup
- salt and white pepper
- shaoxing chinese wine
- ginger water, sliced ginger
- light soya sauce
- fish sauce
- sesame oil

3. fish soup stock
- ikan bilis (i use ikan bilis stock cube)
- ti poh / dried sole powder
- ginger slices 
(young ginger is good for eating, 
old ginger is good for flavours)
- fried garlic, bawang goreng
- salt, fish sauce, light soya sauce, white pepper
- shaoxing chinese wine
- chinese cabbage - stalks (hard part, save the leaves for later)

4. boil fishballs till they float, 
heat through crab sticks, 
remove and set aside

5. add chinese cabbage leaves and tomato slices

6. add fish and boil till almost cooked. turn off fire.
add shaoxing wine and sesame oil.
add in the fishballs, crabstick pieces.

7. garnish with coriander, spring onions, fried garlic, serve hot.

(didn't want to use frozen garlic)

lunch - Kovan market with ko ko, dio dio and daddy
had kuay teow soup and pork leg rice!

dinner
- pork liver with ginger and spring onions
- pork collar slices with breadcrumbs and black pepper sauce
- string beans with egg and leftover char siew
- leftover beef rice from sukiya
- mui choy from kovan chai peng stall
- leftover kiam chye, tau yew egg and chicken


Recipe - Pork Liver with ginger and spring onions

1. marinate sliced pork liver with
- salt, white pepper
- light and dark soya sauce
- oyster sauce
- sugar
- shaoxing wine
- sesame oil
- cornflour
- fried garlic oil

2. fry ginger, white part of spring onions and chopped garlic
3. add pork liver and fry, add shaoxing wine
4. add sauce - light & dark soya sauce, oyster sauce, water
5. thicken with slurry - cornflour and water
6. stir fry till pork liver is just cooked
7. add green part of spring onions, fresh coriander, serve hot

Recipe - Black Pepper Sauce
1. fry butter with onions and chopped garlic
2. add black pepper 3-4 tbsp and fry
3, add sauce - HP sauce and tomato ketchup
4. thicken with cornstarch slurry
5. add salt to taste, serve hot




Recipe - Mini Pork Chop

1. i used sliced collar pork - season with
- salt, white and black pepper,
- light soya sauce,
- oyster sauce
- shaoxing wine
- fresh garlic paste or chopped
- cornstarch
- baking powder and water
- sesame oil

2. to the marinated pork,
add plain flour, 
some beaten egg, 
panko breadcrumbs
(i coat the string beans in this dry batter and fry them too - very nice!)

3. fry battered pork in some oil
4. grill till crispy 
5. serve with homemade black pepper sauce or sweet and sour sauce

worked from morning 9am to 5pm
my view on the bus on thu morning, 7.45am




breakfast - milk drink at home
lunch - mee kia noodle dry from albert street regular aunty's stall
dinner - bought char siew sio bak and pork leg rice with salted veggies








12 April 2023 Wed
morning - ntuc delivery - have lean sliced pork, sliced collar pork and sliced pig liver
lunch - leftover tau yew chicken

dinner - 
- pork liver with ginger and spring onions from the garden
- sliced pork with black pepper
- broccoli - yew choi 油菜
- leftover fish maw soup and tau yew chicken with boiled eggs


Recipe - Pork Liver

1. Pork liver slices season with
- salt and white/black pepper
- chopped or pounded garlic
- oyster sauce, light and dark soya sauce, mountain sauce
- sugar
- shaoxing wine
- cornflour
- fried garlic or onion oil

2. in hot oil, fry a lot of freshly sliced young ginger 
and thick white part of spring onions - fry till fragrant

3. Add pork liver and fry till pink
4. add water, chinese wine, sesame oil, slurry to thicken
5. stir in green part of spring onions and coriander
6. serve hot with rice



Recipe - Lean Pork with Black Pepper Sauce

1. pork seasoned with
- salt, white/black pepper
- light & dark soya sauce, mountain sauce
- oyster sauce
- garlic powder (ran out of garlic)
- shaoxing chinese wine
- cornflour
- oil

2. fry and brown pork with enough oil, set aside

3. make black pepper sauce:
- fry chopped garlic, quartered onions till fragrant
- add 2-3 tbsp grounded black pepper
- add butter, 1-2 tbsp
- add HP sauce x2 tbsp
- add tomato ketchup x1-2 tbsp
- add salt to taste
- add stock or water
- slurry to thicken

4. add fried pork and stir in gravy, add more quartered onions
5. dish out and garnish with green spring onions and coriander
6. serve hot with rice!

lunch - tuna sandwich and tea
tabao dinner - $10 char siew sio bak, noodles, fried kang kong

10 April 2023 Mon
went to waterway with christen and daddy.
lunch - ah ma mee pok soup - so good!! also got a watermelon boost drink!

went ntuc and got fruits, veggies and saba fish

dinner cooked...
- saba fish x1 packet, 4 pcs
- tau yew chicken and boiled eggs + sng mi chou (garlic chilli vinegar dip)
- fish maw soup
- boiled corn - cut into corn bits - so sweet!









i had COVID!!

cooked first huge meal with everyone at home.
jannah helped too

for veg, i only had sweet peas, carrots, onions, tomatoes and potatoes.

- abc soup with chicken stock and ti poh powder
- chicken minced and tofu stew -
with carrots, sweet peas, potatoes, tomatoes and onions
- fish cake with sweet and sour sauce
- omelette x6 eggs for 5 of us
