Lunch - Soto Ayam on a rainy day! wow
Recipe - Soto Ayam (Lampung, Indonesia)
1 whole chicken
- boil till cooked in soto stock,
- set aside chicken,
- cover & rest the chicken for about 1hr
- remove meat from bones and shred the chicken
- add bones into the soup/stock
rempah - blend/grind
- onions x3 big
- garlic x6 cloves
- turmeric 1-2"
- ginger 1-2"
- langkuas / galangal 3-4 slices
- coriander seeds - roasted - 5-6 tsp
- buah keras x6
- salt, white pepper, black pepper
herbs, flavour for soup
- limau purut / kaffir lime leaves x10 leaves
- serai / lemongrass x3 stalks
- bawang goreng
- gula melaka - 1/2 to 1 piece (round type)
- tomatoes x2-3 - medium to large
- optional - coconut cream to thicken soup
- optional - pandan leaves
bowl of noodles and toppings
- ketupat / lontong rice cakes
- noodles (bee hoon, laksa bee hoon, yellow noodles, kuay teow, tung hoon)
- bean sprouts / tau geh
- chinese celery / keng chye
- shredded carrots
- shredded cucumbers
- fresh lime - small and big (both different flavours!)
- fish cakes
- shredded chicken (from whole chicken cooked in the soup/broth)
- keropok or potato chips
- bergedel / potato cakes
Recipe - Bergedel
1. mix and make patties
- mash potatoes
- garlic paste / minced finely
- bawang goreng / fried shallots
- egg yolk
- salt, white and black pepper
2. coat patties in egg white
3. fry patties till golden

first attempt cooking this from scratch!
made soto ayam rempah yesterday and cooked the dish today,
not difficult, so exciting!
caught up with cooking it that i forgot to take some good pictures :(
i thot i did though... but realised i didn't take the pics i wanted

made soto ayam for my birthday lunch as well!

so today, i made the sambal chilli that goes with the ayam soto. it's in the recipe that nanik gave but i've not made it since she left...
so, today, i felt like having it again... but made some "adjustments" to the recipe LOL. the original was simply blended/ground fresh red chillis and garlic but i added tomatoes for my version and some green chillis that were lying around...
the "adjusted" chilli sambal turned out really nice!!
Recipe - Chili Sambal for the Ayam Soto (Indonesian)
1. grind/blend together:
(i blended these after i made the soto rempah)
- red chilli x6-7
- green chilli x4-5
- garlic x2-3
- tomatoes x2 - cut into cubes
- season with salt, light soya sauce and sugar
- add a bit of lime juice
2. fry the blended mix with oil and limau purut
3. add water or chicken stock or use stock cube, season to taste
4. cook the sambal till the chilli is soft
5. serve with ayam soto (see pics below)
i think i might use this sambal
for sambal goreng or to fry petai!
