Alow's Prawn Noodle Soup
when i was growing up, i used to watch Alow cook Prawn Noodle Soup and i really love her recipe. and i looove the way she lets the prawns sizzle in the wok. her stock uses garlic, green chillis and chilli powder. she likes adding fried crispy shallots into the stock. kinda unusual but i love how the final soup isn't spicy but has a hint of spice in it!

ok for this occasion, i made the soup in this way.

ingredients

- prawns 2kg, shelled (shells put aside for stock
- pork ribs 1kg
- pig's maw / pig stomach 200g-300g
seasoning and flavours
- bak kut teh pepper mix (see packet below) x1 sachet
- garlic x4-5 cloves
- onions x1 big
- green chillis x2-3
- chilli powder 1-2 tbsp
- tipoh powder

- ikan bilis powder or stock cube
- chicken stock or stock cube
- sugar x3 tbsp
- salt
- salt

- fish sauce

- laksa noodles,
- sek mee (yellow noodles),
- kuay teow,
- bee hoon
- bean sprouts, tau geh
- kang kong
- fried shallots
- fish cake - sliced
- pork slices or pork ribs
- fresh prawns (peeled is convenient)
- chilli powder (fine, plain)

how to cook:
1. slow cook pork ribs and pig's maw / pig stomach
- remove gaminess taste from pork -
boil pork ribs and pigs maw,
remove pork ribs and maw, rinse and set aside.

- using the bak kut teh pepper mix (see below)
and some garlic cloves,
boil pork ribs and pork maw till tender
- in hot oil, add sugar, garlic, onions, green chilli, chilli powder
- fry till fragrant
- add empty prawn shells
- fry until dry and until the oil is released (ie. no more water)
3. make 1st prawn stock
- add water only when prawn shells are fragrant, dry, the oil is released
- boil till stock is thick and fragrant
- remove prawn shells and set aside to fry a 2nd time
(this lot includes garlic, green chillis, etc)
- add slow cooked pork stock
- season with salt, light soya sauce, fish sauce
- add ti poh powder (dried sole fish), ikan bilis stock cube (or powder)
- add chicken stock / stock cube
- add fried crispy shallots and fried crispy garlic
- boil the mixed soup stock (prawns + pork stock)
4. make 2nd prawn stock
- fry prawn shells in oil for 2nd lot of prawn stock
- when fragrant, add water and boil
- then remove shells
5. cook combined stock
- combine 1st + 2nd prawn stock + pork rib stock
- add pork ribs into the combined stock
- add fried crispy shallots and fried crispy garlic
- boil the combined stock with the pork ribs
- season to taste

1) prawn stock
*1-2 kg prawn shells with head
*garlic - whole x6-10 pcs
*green chillis x2-3 (this flavour is unique & my own personal favourite variation)
*chilli powder 2-3 teaspoons
*sugar 2 tablespoons (Alow uses rock sugar)
*salt/pepper

1. fry garlic, green chilli, chilli powder with enough oil
2. add prawn shells/heads, sugar & fry till dry
3. add water, salt & pepper & boil (can add black sauce for colour)
4. strain shells + other ingredients - keep only soup
5. add pork rib / pork bone stock to prawn stock and boil together
6. add fried onions (5-6 tbsp) to the soup (chang ju lah)
optional: (i used this on 21 Jan 2024)
- ikan bilis powder or stock cube
- chicken stock cube
- ti poh powder
- fish sauce
- i used the pepper bak kut teh mix to cook the pork ribs 1 day before
hae mee soup:
add pork bones or chicken bones to make hae mee soup
--> Stock & Soup can be freezed & used on other occasions

*any noodle
(i like to use laksa noodle, yellow hokkien mee or sek mee, bee tai mak, udon)
*chopped garlic 4-5 pcs or more (i like a lot of garlic!)
*sliced veg: bean sprouts, kang kong, cabbage, carrots, leeks, chives
*sliced fish cake
*garnish - chopped spring onions & corriander, sliced red chillis
*soya sauce & pepper to taste
*prawn stock or hae mee soup
*chopped garlic 4-5 pcs or more (i like a lot of garlic!)
*sliced veg: bean sprouts, kang kong, cabbage, carrots, leeks, chives
*sliced fish cake
*garnish - chopped spring onions & corriander, sliced red chillis
*soya sauce & pepper to taste
*prawn stock or hae mee soup
1. stir fry garlic with mixed veg (except bean sprouts), season with salt & pepper, set aside
2. fry garlic then add noodles
3, add soup and stir noodles (not too long)
4. add bean sprouts, soya sauce & pepper to taste
5. when noodle has cooked till tender (to a texture not too hard or too soft), add veg
6. stir & turn off fire
7. dish, garnish
8. can also fry omelette as garnish

this fried noodle goes well with fresh sliced red chillis in soya sauce or sambal belacan with lime.
