ko ko cooked loh gai yik!
we had the stew for new year's eve dinner and new year day lunch

gravy
- fry garlic then add water and sauces below:
- hoisin sauce
- oyster sauce
- red fermented beancurd

then add everything else in the stew....
- chicken wings
- sio bak 
- fish maw
- pork skin
- cuttlefish
- hard boiled eggs
- tofu fishcake
- fishball

- kangkong and iceberg lettuce

tummy still not too good.

at NEX with jannah. 
had yuen kee dumplings and noodles at food court
and dim sum, porridge at canton paradize.

after eating we walked around ntuc and bought blueberries, golden kiwi, duck legs x2, minced pork and pork collar shabu shabu. wanted to make a duck sioh or itek sioh.

for dinner, cooked sukiyaki pork with garlic stems,
and grilled a frozen otah.

also blended the sioh gravy to marinade the duck legs 
(bought 2 duck legs, $4 each duck leg)
marinated the duck legs and bamboo shoots overnight.
gonna slow oven bake the duck legs tomorrow!

still had stomach pain so went ttsh A&E.
lunch at ttsh food court 2pm+ - had kiam chye soup with pig organs - nice!

went home and knocked out from the pain killer given at A&E...
woke up and cooked prawns with garlic. andcelery. very yummy!
and heated up jannah's pork patties and cabbage.

bought a huge red snapper fish head on 5 Dec 2025 from ntuc.




RECIPE - ASSAM FISH
Mama's recipe (from my Lao Ma)

made assam fish, based on what i think is mama's recipe LOL

boil:
- turmeric x6-8 pcs
- assam skin x5-6 pcs
- onions x1 big 
- garlic 2 cloves
- red and green big chillies - 1 each
- lemongrass x2
- limau purut x6 leaves

season:
- fish sauce, 
- salt, 
- sugar, 
- ikan bilis powder/cube

add:
- fish (clean/rub with salt, a bit of water - till slippery)
- tomatoes
- ladysfingers
- fried brinjals and long beans (fry with salt and garlic)
- fried shallots - bawang goreng

- prawns with veggies - celery, garlic stems, cauliflower, leeks
- sotong with crispy tau guah, onions, garlic and chilli
- leftover tau yu bak
- archar

dinner 
- ikan kurau with butter lemon sauce and veggies

THREADFIN with BUTTER MUSTARD LEMON GRAVY and VEGGIES
- ikan kurau - coated with rice/corn flour and pan fried
- cauliflower, garlic stems, celery fried with garlic, salt, pepper and butter
- butter, mustard, lemon sauce using leftover flour to thicken

Recipe - Pan Fried Fish with Butter Gravy
1. mix rice flour, corn flour, plain flour, salt and white pepper to coat fish
2. coat fish and pan fry till light golden, finish cooking in oven
3. add garlic and veggies - stirfry, finish with a spoonful of butter, season with salt, set aside
4. add butter to pan and melt butter
5. add flour mix and then stock, water or milk to make a roux
6. add mustard, lemon, salt, black pepper, sugar/honey if needed and stir till gravy is thick
7. add chopped fresh parsley and set aside gravy for fish and veggies
8. serve hot!

dim sum at 50% after 1st $20 spent

then went to ntuc to buy fish, pork and veggies
bought red snapper head!

cooked 2 types of fish, prawns and veggies!
- greasy grouper HK style and 
- red snapper (ang guei or ang zhor) - 
steam hk style for one piece and for other 2-3 pieces, made assam fish mama's style

pan fried prawns with long beans and brinjals
seasoned with garlic, salt and pepper







Assam Turmeric Fish
mama used to tell me about her assam fish recipe but i didn't write it down when i could :(
she said it's lao ma's recipe (lao ma is peranakan).

this recipe is supposed to be very simple. mama says it has only 4 key ingredients (excluding the fish, salt, sugar and any other seasoning).

i only can be sure that this dish has turmeric and assam LOLOL.
can't remember the other 2 ingredients :(
but i'm sure it's quite basic. 

tried a recipe today.

Recipe: Assam Turmeric Fish

ingredients:

1. fish - i used red snapper tail today
 (NTUC was selling the red snapper at @$10/kg)

2. aromatics:
- fresh turmeric - pounded
- assam paste x1-2 tbsp
- assam skin x4-5 pcs
- lemongrass x3-4
- limau purut leaves
- red and green chillies
- black pepper x1-2 tsp
- onions x1
- garlic x1

3. veggies
- tomatoes x1 big
- ladysfingers x5 - cut into pieces
- brinjal  - fried and season with salt
- long beans - fried and season with salt

Cooking

1. in a pot, add water and all the aromatics
2. boil for 15-20min
3. season with salt, fish sauce, sugar, coconut cream/milk
4. add fish and veggies
5. serve hot with steamed jasmine rice









Reference:
i managed to find a simple assam fish dish online, cooked by a grandma in malaysia. i think this recipe is the closest to mama's recipe.
