Chicken Stuffed with Glutinous Rice
& Other Types of Chicken Soups

there's nothing like the good old chicken soup, the ultimate comfort food for many people around the world. here are a few types of chicken soups that we cook at home (most are asian type chicken soups). just ignore the bad pics taken from my iphone4 & iphoneSE LOL

Chicken Stuffed with 
Glutinous Rice, Mushrooms & Scallops

Today i made chicken soup with a whole spring chicken, stuffed with glutinous rice, dried scallops and chinese dried shitake mushrooms. 

dip the chicken and rice in a mixture of salt & white pepper... 

omg so good!


RECIPE: CHICKEN SOUP - 
CHICKEN STUFFED WITH GLUTINOUS RICE

Ingredients
- 1 whole chicken, cleaned
- garlic x4 cloves
- red onion, medium x1, cut into 4-6pcs
- red dates x4-6pcs, cut into halves
- glutinous rice, about 200g 
(i had remainders for about 1 bowl after cooking)
- dried chinese mushrooms, small x12, cut into halves
- dried scallops, small x10-15pcs or more
- light soya sauce
- chinese shaoxing wine
- salt, white/black pepper to taste

Prepare the ingredients

1- glutinous rice
wash and soak the glutinous rice for about 3-4 hours 
or soak in water overnight. 
strain away the water and season with salt & white pepper

2- dried chinese mushrooms (small) x12pcs
soak dried chinese shitake mushrooms in water 
& keep the clean/clear part of the soaking liquid

3- dried scallops (small) x10-15pcs
soak dried scallops with chinese wine and a little water

4- aromatics
- shallots x6pcs
- garlic x6pcs
- red dates x6pcs

5- whole spring chicken
season with salt & white pepper
and stuff the chicken (in layers) with
- scallops 
- dried mushrooms 
- glutinous rice

6. in a slow cooker add...
- soaking liquid from dried mushrooms 
- soaking liquid from scallops & chinese wine
- add water or plain, unsalted chicken stock
- salt, white pepper, light soya sauce to taste

7. slow cook chicken for about 3-4 hours

8. optional - 
add fresh or canned mushrooms to the soup 
about 30min before serving it hot as a meal on its own

DIP
in a sauce plate, mix salt and white pepper powder.
this is the dip for the chicken, mushrooms and glutinous rice, if needed.

added dang gui 2pcs, yoke chok 10-15pcs and wolf berries 2-3 tbsp in the chicken soup. the chicken is stuffed with seasoned glutinous rice, scallops soaked in shaoxing wine and dried chinese mushrooms (soaked). glutinous rice is seasoned with salt, white pepper, sesame oil, fried garlic and garlic oil, shaoxing wine - smells amazing before it's even cooked! also added to the soup - 1 garlic clove, 4 red dates, salt & light soya sauce. this hot soup is always comforting and satisfying with hot steamed rice and some soya dip or salt/white pepper dip.

Glutinous Rice

not all the rice can fit into the chicken. 

remember, the rice had already been seasoned with salt & white pepper.

add aromatics and ingredients
- fried shallot oil, 
- crispy fried garlic and a bit of garlic oil
- add remaining dried mushrooms & dried scallops, 
- add chicken stock 
- pandan leaf

and steam rice till tender

some other things that you can add to the rice:
- braised peanuts
- lap cheong or chinese sausage
- dried prawns or hae bi
- chicken fried or seasoned with ginger, oyster sauce and chinese wine

sometimes milky too.

Chicken Feet (1kg) 
Soup slow cooked, seasoned with 
salt and crushed white peppercorns,
1 tbsp light soya sauce

additional ingredients - options: 
- raw peanuts, 
- lotus root, 
- canned button mushrooms
- fish maw, chinese cabbage / round cabbage

1kg chicken feet, salt, crushed white peppercorns, 
1 garlic clove, light soya sauce, 1 tsp shaoxing wine

CHICKEN COLLAGEN SOUP
(OR JELLY WHEN CHILLED)

so after you've slow cooked your chicken feet soup, 
cool and separate the chicken feet from the broth/stock. 
then leave it in the fridge overnight.
your soup will turn to jelly the next day!

some people add meat and/or mushrooms and/or veggies 
inside the soup before chilling and setting it overnight. 
the result is like a jellied terrine!

but do you see the jelly? it's so tasty and addictive!




as for the chicken feet, just fry with garlic, chilli, 
oyster sauce & dark soya sauce...


some people would use chicken wings for collagen soup, 
but i find that an awful waste of good wings!
just grill the wings and have them with the soup and chicken feet!

chicken stock/jelly/collagen soup can be a great superior soup base for other soups!!

WITH CHICKEN FEET SOUP AS A BASE
OR AS A SUPERIOR SOUP  鸡高汤

ingredients to add into the chicken stock/soup:
- fish maw
- wood ear black fungus
- black fungus
- bamboo shoots (i didn't have this so i used water chestnuts)
- chinese dried mushrooms

i didn't have sea cucumber, abalone, sharks fin, scallops, goji berries Lol

seasoning after you turn off the fire:
- chilli oil
- black vinegar
- chinese shaoxing wine
- sesame oil
- spring onions and coriander

Chicken Soup Recipe

whole chicken
salt, 
crushed white peppercorns,
shallots x4,
garlic x1,
dried scallops x8 to x10pcs
japanese fragrant light soya sauce,
shaoxing chinese wine, 2tbsp or 1/2 cap 
(use the cap from the chinese wine bottle)



can't decide which photo edit i like best

i dip the chicken in a salt, white pepper mixture
so yummy!! seriously!

KAMPONG CHICKEN SOUP WITH
JAPANESE SOBA & SOYA SAUCE

- 3 slices of tang gui, 
- soba sauce, 
- japanese soya sauce, 
- shaoxing wine,

home-made chicken and prawn balls with bamboo shoot soup

MEATBALLS
- minced chicken
- minced fresh prawns
- bamboo shoots
- fried crispy garlic + a bit of fried garlic oil
- cornstarch
- salt
- light soya sauce

BLACK CHICKEN SOUP WITH
CHINESE HERBS

black chicken soup
with mixed chinese traditional herbs for chicken soup

a small black chicken would cost about $5 at the wet markets and below $6 at the supermarkets. the meat is more solid and has less fat, making the black chicken a healthier alternative.









Chinese Herbs
mixed chinese traditional herbs - you can buy these pre-packed at a local chinese medicine shop, like hock hua, or even at NTUC and Giant - herbs include 

Polygonatum or Solomon's Seals or Yu Zhu / Yoke Chok, 
Goji Berry, 
Chinese Yam, 
Chinese Angelica or Dang Gui 当归
Codonopsis, 
Liusticum, 
Astragalus, 
Liquorice 甘草片



since i'm not familiar with chinese herbs and proportions for soups, i would buy a pack of pre-mixed chinese herbs for my chicken soup and use half of every herb portion as i prefer a lighter herbal taste and also i have to use less herbs in case they interfere with regular medications.

CHINESE CHICKEN SOUP OR STOCK

this stock is good for making chicken rice or chilli sauces.

1. season water or stock with 
- salt, 
- white pepper, 
- light soya sauce 

2. for more flavour, add 
- ginger, 
- shallots x4, 
- garlic x1 
- chinese shaoxing wine

3. boil chicken till cooked
enjoy chicken with my homemade ginger paste!
