there is always Chicken Macaroni Soup!!


survived living in Perth with jamie and eugene by having regular meals of Chicken Macaroni Soup!! hahaha!!


here are a few pics with a more improvised version...

baby corn,

omg so yummy!! i used to dump a few large spoonfuls of this chilli sauce into my soup... and it transforms into a yummy chilli chicken macaroni soup! i also use this chilli for dips (like for steamboat or kuey pie tee or ngo hiang) and a lot of other different dishes (like fried rice or fried stuffed chilli fish).

btw the grind of fresh chilli cannot be too coarse or too fine. it will taste different if you don't grind it in a certain way.

Chicken Macaroni Soup
My Comfort Food

everyone has their all-time fav comfort food...
chicken macaroni soup is my comfort food!

when i was growing up, my late nonya grandma (i call her "Alow") would make us some chicken macaroni soup. usually for our sunday lunch - shared with uncle, auntie and cousins. on the side she also made an incredible appetising chilli sauce to go with it... this chilli sauce is what i now call "chicken macaroni chilli" LOL

basic chicken soup recipe:
- 1 whole chicken
(meat to shred when chicken is cooked, bones to return to the soup to boil up)
- ginger - 2 to 3 inch knob
- carrots - cubed
- canned button mushrooms - sliced or halved or quartered

Shredded Chicken - season with
- light soya sauce
- sesame oil
- white pepper
- optional - chillis, oyster sauce, shaoxing wine, spring onions, corriander, broth

to make a basic bowl for serving...
- macaroni, al dente
- shredded chicken meat - seasoned
- add hot soup, carrots, mushrooms
top with...
- macaroni chilli sauce
- fried crispy shallots
- chopped spring onions
- chopped fresh corriander
- tang chye (preserved salty veg/pickled)
- fresh cut chilli or chilli fakes

in our kitchen, my job as a 6-12 year old was to shred the whole chicken while it's smoking hot and season the shredded meat with light soya sauce and sesame oil for the family. by the time i was a teenager, i could prepare the whole meal by myself. when i was in uni and far far away from home, i also made grandma's fabulous "chicken macaroni chilli"...then, in australia, i used a kilo of fresh red chillis to make one batch - and this lot of chilli sauce would last for about 1 week unless my cousin joins me for a meal, haha!! we just LOVE this dish and the chilli sauce!

whenever i feel homesick or am craving for something simple and homely, i will have to cook this nonya style chicken macaroni soup. lately, i add on more ingredients that i love!

these days, i add on ...
- tomatoes,
- one red onion or 2-3 red shallots,
- baby corn,
- other kinds of fresh mushrooms,
- crabsticks,
- leeks,
- local spinach (bayam),
- iceberg lettuce,
- fish cakes or fish balls,
- home-made pork mince balls (this is soooooo good to have!), etc

oh wow... the thought of this childhood favourite...
i CAN'T WAIT for my next bowl of chicken macaroni soup!

sometimes, i use the macaroni soup for other things, like bee hoon, mee suah or kway teow soup, porridge or chicken rice.

sometimes we don't have chicken drumsticks or thighs. 
chicken breast isn't great but with careful cooking and seasoning, 
the meat can be quite tasty and even delicious.

Recipe: Shredded Seasoned Boiled Chicken

to cook the chicken breast/meat nicely, 

1. season with 
- salt, 
- light soya, 
- white pepper 
after soaking it in salt water for a while (brine). 

2. boil the chicken till just cooked 
and then remove from the soup and set it aside to rest. 

3. as you shred the chicken breast meat, season with 
- sesame oil, 
- light soya sauce 
- white pepper. 

(optional) you can also add 
- a bit of shaoxing wine, 
- fried garlic or onion/scallion oil, 
- oyster sauce, 
- chopped red/green chillis 
- chopped spring onions and coriander
- a pinch of sugar



of course, seasoned chicken wings and thigh/drumstick meat would be best!

Alow's Recipe - Macaroni Chilli
Homemade Chilli Sauce

i used to drown my macaroni soup with this chilli. 

my cousin eugene would watch me make this chilli sauce (with 1kg of fresh red chillis) when we were studying in perth in 1993-1994 - he always said it's got a fruity smell and then ate up a large jam glass bottle of this macaroni chilli within a week! to be fair, jamie & i helped eugene eat up that huge jar of chilli sauce LOL - we had hotpot or steamboat all week for our dinner - never fails to please! steamboat is the most practical meal... because we - eugene, jamie and me - we all liked different ingredients so hotpot/steamboat assures us of eating food that we like!! jamie wanted sotong, prawns and fish, eugene hated prawns but eat everything else, i love chicken and almost everything else ... one thing we all enjoyed together was veggies - yup. we never complained or got tired of the veggies used for our steamboat meals - chinese cabbage, zucchini, squash... and a lot of zucchini's Lol oh, and for our steamboat, i didn't even bother using a chicken stock. i used plain water but our soup at the end of the meal tasted so good that we drank every drop of it!! and we finished up the macaroni chilli and steamed rice as well!! happy days!!

these days, i prefer to have the chilli sauce as a dip or as a seasoning. i do eat a lot of this chilli sauce when i'm eating home cooked steamboat, sukiyaki or hot plate bbq (all these with hot steamed rice)!!



Alow's Recipe - Macaroni Chilli

ingredients
- chicken skin
- blend/griund/pound red chillis (mix big chilli and chillipadi)
- lime juice
- light soya sauce
- salt to taste or salted chicken stock


chicken skin - add salt to the skin/fat & fry till crispy, fragrant

prepare & fry red chilli - grind/blend/pound to this

add lime juice, light soya sauce,
salt or salted chicken stock to taste


cook till chilli is not raw any more
