Fragrant Ginger Paste or Ginger Sauce

it's easy to make your own ginger paste at home.
fragrant, multi-uses for different dishes, easy to cook and freeze.


Recipe - Ginger Paste
Great for dips and 
cooking chicken rice, 
steamed chicken and fish

1. Grind Ginger Mixture
- ginger
- garlic
- spring onions or shallots 

2. Fry with oil
preferably using oil from chicken skin
cook until ginger is no longer raw

sometimes i microwave the ginger mixture with oil.

3. Season with 
- Light Soya Sauce
- Salt 
- Sugar
- Chinese Shaoxing Wine

Recipes 

Ginger Scallion Oil - fry and pour over boiled chicken
- aromatics mix - chop ginger, onions, spring onions, fresh coriander (little), garlic (little)
- add salt and sugar to the aromatics mix
- heat up oil and fry aromatics mix till fragrant
- set aside as a topping for boiled chicken



Boiled Chicken with Ginger Scallion Oil

1. boil chicken in a pot of water, add ginger, onions/spring onions
season water with salt, white pepper, shaoxing wine and light soya sauce (1-2 tbsp)

2. remove chicken and add soya sauce mix + ginger scallion oil

Soya Sauce Mix - boil and pour over boiled chicken
- light soya
- oyster sauce
- shaoxing chinese wine
- garlic oil
- water / stock

Ginger Scallion Oil - fry and pour over boiled chicken
- aromatics mix - chop ginger, onions, spring onions, fresh coriander, garlic (little)
- add salt and sugar
- heat up oil and fry aromatics mix till fragrant
- set aside as a topping for boiled chicken
