Recipe - Spaghetti with Mushrooms, Tomatoes, Olives and Red Peppers
1. almost cooked spaghetti seasoned with raw garlic and butter
(spaghetti boiled in salted water till just before al dente)
2. fry garlic with fresh button mushrooms and tomatoes,
3. fry garlic with roasted red peppers, black and green olives
4. fry garlic, add some salted water used to cook the spaghetti,
then add seasoned spaghetti, cooked mushrooms, tomatoes, red peppers and olives
5. squeeze 1.2 a lemon, mix and serve hot

chinese cabbage, spinach, string beans and cucumbers
would have been nice with mushroms and noodles - but did not add

and heated up all the leftovers

Recipe - Steamed Pomfret Teochew Style
- you'll need a very fresh pomfret for steaming
chinese silver pomfret (斗鲳, or dao chior her) -
the best pomfret is the one with roundish fins/tail and body shape
today i used a 500g fish (steam for around 10min)
other ingredients:
- sliced kiam chye 2-3 tbsp (soaked till less salty)
- sour plum x3. - seeds removed
- sliced ginger x10 pieces (add more if using young ginger)
(place ginger in fish belly and with other ingredients on the plate)
- sliced tomatoes x1 medium to large
- sliced red chillis x1 big
- sliced chinese mushrooms x4 - softened after soaking in hot water
- light soya and sprinkle of salt
- white pepper
- fried crispy garlic and shallots
- option: pork lard (raw)
garnish with fresh spring onions and coriander
dips:
- orange oil or kek yu
- sng mi chou
- tau cheo and chillipadi
for explanations or commentary, refer to this video...
take note -
she uses wine and sesame oil and pours hot oil after steaming
but teochew steamed fish is more PLAIN or cheng/qing/清,
don't use wine, sesame oil and hot oil!
just use salt, light soya sauce and white pepper)

dinner - cooked
simple steamed chicken with soya sauce,
fried eggs and mushrooms
stir fried leftover chinese and beijing cabbage with enoki mushrooms
Recipe - Simple Steam Chicken
- season chicken with salt, white pepper and chinese shaoxing wine
- fry garlic in pot till fragrant
- then add water (enough to steam the chicken)
- add seasoning to liquid
- add light soya sauce, oyster sauce, sugar, salt and white pepper
- add chicken into the pot and cover pot
- braise with slow/medium fire for about 30-45 min depending on size of chicken
- once chicken is done, add wolfberries and serve hot with steamed rice

1. add pandan, ginger, dang gui, wolfberries
and red dates on the grease paper
2. place the chicken on top
3. top chicken with pandan, ginger, dang gui,
wolfberries and red dates
4. wrap the chicken with the paper
and cover with hot coarse salt
5. bake 220 degrees for about 30-45 min,
afterwards you can steam if chicken is still raw
6. serve chicken hot

1. soak fish in salt water, set aside then add pepper and coat with corn flour
2. fry the fish and set aside to grill till golden
3. cover/ baste fish with a layer of taucheo sauce
4. grill fish again with taucheo sauce
5. once golden, serve fish hot with fragrant jasmine rice

fry below then add some water
- taucheo x1-2 tsp
- garlic x6-7 cloves
- red chilli x4
- green chilli x3
- sour plum, sng bueh x3-4
- juice from fresh small limes x1-2
- sugar x1tsp
- optional: shallots x1-2
- optional - slurry (cornstarch mixed with water)
Recipe - Fish with Taucheo Sauce
1. fry seasoned fish with cornstarch
2. set aside fish on a grilling tray
3. add taucheo sauce
4. grill for 5min, 150-175 degrees or until fish skin is sizzling/crispy
5. serve fish hot

started to prep and cook quite late, after 10am :(

- braised pork shoulders then roasted them
- braised hard boiled eggs
- salt baked chicken (no time to cook through)
- stir fried chinese cabbage with mushrooms, beancurd skin, sesame oil
dinner - cooked
- salt baked chicken
- veggie - baby kai lan and leftover chinese cabbage with beancurd skin
Recipe: Roasted Braised Pork (烤五花肉)
1. soak pork pieces in brine (2-3 days)
brine
- water to cover pork
- salt 2tbsp
- baking powder 1-2 tbsp depending on amount of water and pork
- light soya sauce
- shaoxing chinese wine
2. fry aromatics and make gravy for braise pork
(tau yu bak recipe)
3. add pork and water to cover pork, braise
- high heat, boiling for 30min
- covered and low heat for 20min
4. add roasting basting sauce on braised pork
sauce to baste pork before roasting:
- honey 1 tbsp
- 5 spice powder 1 tbsp
- light soya sauce 1 tbsp
- shaoxing chinese wine 2 tbsp
- oil 4-5 tbsp
- salt and pepper to taste
5. roast pork till golden brown on both sides
serve with braised pork gravy,
braised hard boiled eggs and
garlic chilli and vinegar sauce (sng mi chou)

a new attempt on salt baked chicken,
using the real big coarse salt
Recipe - Salt Baked Chicken
1. season whole chicken
with salt, white pepper, shaoxing wine,
leave in the fridge to dry (i left them for 2-3 days)
2. wrap with grease paper
- on the grease paper,
place ginger, red dates, wolf berries and dang gui
on the top and bottom of chicken
- add chinese shaoxing wine (about 2-3 tbsp)
- fold paper and wrap, use another paper if needed
3. prepare the pot for baking
- heat up coarse salt by frying in dry pan
- add hot salt at bottom of baking pot
- add wrapped chicken and pandan leaves (don't forget!)
- cover chicken with hot coarse salt
- cover pot with lid or aluminium foil
3kg coarse salt from giant supermarket $1.50
4. bake chicken in the oven - i used the turbo oven,
200-220 degrees, 60-70 min
1 add pandan leaves from the garden
5. remove chicken from pot and unfold the paper
6. serve chicken hot and with fragrant white steamed rice
this attempt makes chicken a bit dry...
perhaps i should steam the chicken in a pot with a bit of water
will be yummy i'm sure!

notes from the above video:
Hakka Salt-Baked Chicken is a traditional classic of chicken "baked" in coarse salt. Back when the modern oven was not available, the Hakkas would fry coarse salt and bury the chicken in the smoking hot salt to cook it. These days, this dish is hard to find in Singapore so when I see it on the menu, I make it a point to order it!
Hakka Salt-Baked Chicken
A whole 1.8-2kg chicken
3kg coarse sea salt
50g ginger
50g shallots
25g garlic
2 tablespoons oil
2 tablespoons sesame oil
Salt and sugar to taste

lunch - ayam soto
today, i made the chilli sambal to go with the soto since i had some leftover chillis lying around and i haven't made this sambal since nanik left.

so today, i made the sambal chilli that goes with the ayam soto. it's in the recipe that nanik gave but i've not made it since she left...
so, today, i felt like having it again... but made some "adjustments" to the recipe LOL. the original was simply blended/ground fresh red chillis and garlic but i added tomatoes for my version and some green chillis that were lying around...
the "adjusted" chilli sambal turned out really nice!!
Recipe - Chili Sambal
to accompany the Ayam Soto (Indonesian)
1. grind/blend together:
(i blended these after i made the soto rempah)
- red chilli x6-7
- green chilli x4-5
- garlic x2-3
- tomatoes x2 - cut into cubes
- season with salt, light soya sauce and sugar
- add a bit of lime juice
2. fry the blended mix with oil and limau purut
3. add water or chicken stock or use stock cube, season to taste
4. cook the sambal till the chilli is soft
5. serve with ayam soto (see pics below)
i think i might use this sambal
for sambal goreng or to fry petai!

lunch - had no mood or energy to cook😡😩😩
wanted to get chicken rice but nobody wanted to help me get it, so decided to cook...
BUT BUT BUT... i couldn't get into it.
fried 7 eggs but turned out scrambled and all stuck in my non stick pan :(
fried tofu but the tofu turned out smashed and yucky looking. tasted ok though LOL
fried lotus roots and cauliflower - but because i prepared them like 5 days ago (on mon), i decided to throw those away...
so i gave up cooking!!

and her food supplemented the veggies that i cooked!

(soaked in salted water and some baking powder)
