i think the mandarin word is "清“, meaning clear, light, distinct.
some typical teochew dishes are:
- braised duck 卤鸭 with braised tofu or tau guah
- steamed pomfret teochew style 潮蒸鲳鱼
- fish soup
- su chye 蔬菜
- teochew porridge
- oh nee - yam paste with golden pumpkin 金瓜福果芋泥
(there are a quite a long list of teochew dishes known to many singaporeans)
some teochew style sauce dips are:
- sng mi chou - garlic, chilli, rice vinegar
- tau cheo - fermented brown beans
- kek yew - orange oil soy 金桔油
