So this is what we ate in the month of Jan 2020...
hopefully MORE veggies!!

just wanted to bring this day, 15jan, upfront in this blog...
to highlight the yummy steamed red grouper at hong lim!!

ie "cheng" (is this the chinese equivalent word 轻 ?)

fried egg sandwich with fried onions, cucumber and tomatoes.
eaten with tomato ketchup and chilli sauce.
a fav from sec school days when i bought this sandwich at the bakery for $2.50
(quite ex then as u can get chicken rice for $1.50!)

pappadam with brinjal and fish curry gravy!!

Recipe: Chinese Mushroom Stew
CNY Day1 - 25 jan 2020

Ingredients
- chopped garlic & ginger
- Dried Chinese Mushrooms
- Fa Choy
- Straw Mushrooms
- Sauce Mix
- Optional: Abalone, Dried Oysters

Sauce Mix
- oyster sauce
- light soya sauce
- shaoxing wine
- pinch of salt & sugar
- white pepper
- fried garlic & garlic flavoured oil
- sesame oil
- stock (from boiling chicken feet or lightly flavoured stock from veg or seafood or meat)

these are the ingredients for starting to cook teochew tau yew bak
unfortunately, the pic of the pork knuckle is blurred till unrecognizable!!!

INGREDIENTS:
garlic, star anise, mushrooms, crushed peppercorns sugar, salt to taste, coriander roots.
after this, braise the pork with dark soya sauce, water, red dates (x12)

Salad & simple Tom Yum Soup with rice
tom yum soup with leftover beef soup, sotong ball, tang hoon
tom yum red paste, tom yum herbs, fish sauce, palm sugar, lime juice

SOUP & RICE!!
chicken feet soup with peanuts and lotus root. soooooooo yummy!!
also a good way to give Christen a boost Lol

Lotus Root & Peanut Soup
- lotus root
- raw peanuts - skin removed
- chicken feet/claw 500g or 1kg
- 1 garlic
- 3 red shallots
- 10-12 small red dates
- wolfberries
- tang gui - 1 small slice

dump all ingredients in the crockpot/slow cooker for 2-3 hours, high heat
season with salt, white peppercorns (crushed) & a dash of superior soya sauce

soup was sticky and thick
dumped in the crockpot for 2 hours, high heat
the secret is the number of chicken feet/claw used LOL

4 seasons cafe has this amazingly simple ham and egg sandwich.
but i couldn't eat it. didn't have any appetite.
kept thinking of poor christen in hospital LOL

soup ramen at famous shop in japan but not too crowded in singapore
together with fried chicken, the set is about $15
possibly on the expensive side

daddy wanted beef golden coin. so we bought $20 worth of that (beef golden coin about 1.2kg) and cooked it in a crockpot with 12 tiny shallots, 1 garlic, tang gui x2 tiny pieces, cordon bleu brandy 3-4 tbsp, salt, crushed white & black peppercorns, japanese fragrant soy sauce x3-4 tbsp, rock sugar.

the pot was on from 12+pm. but then i dozed off in the afternoon and forgot about my beef till around 5.45pm. geez. it was so soft then that it crumbled as if it was canned corned beef hahaha.

i made 3 sauces to go with the beef and kuey teow noodles.

1.
soya sauce mix (same mix for HK-style steamed fish)
superior light soya sauce
chinese shaoxing wine
fried garlic and garlic oil
sugar

2.
thai style dip (same mix for Thai steam fish with garlic, chilli, lime)
garlic
corriander
green chilli
lime juice
fish sauce
palm sugar (or raw/white sugar)

3.
china-style chilli dip (also used to coat dumplings & scallion noodles)
lau gan ma garlic chilli crisps
sesame oil
black vinegar
soya sauce mix
raw garlic - chopped

what can i say, everyone was just going wow wow wow... the beef was soooooo amazing! and the soup is soooooo savoury and simple in taste. altho i find it a little oily and sweet... but it's for pleasurable indulgence - only for today!!

seasoned with japanese soy sauce and mirin
this goes very well with pasta oglio olio or salad or toast with fried eggs.
