Soups
- bakwan kepiting

(didn't make kiam chye duck and pig stomach pepper soup)

from my hazy memory...
in the 1970's, 1980's, early 1990's...
we would eat the same dishes for about 3-4 days
since almost all shops, markets, restaurants
would be closed for about a whole week!
list of usual reunion dinner dishes mama used to cook by herself.
main - buah keluak - incl stuffed meatballs into the black nut
main - ayam sioh
must have - chinese leeks with prawns
soup 1 - kiam chye duck
soup 2 - bakwan kepeting
soup 3 - chinese cabbage soup with fishballs, sea cucumber, fish dumplings, fish maw
soup 4 - pig's stomach soup
soups, curries and stews would be boiled and covered in the pot before the kitchen is closed for the night and boiled again first thing in the morning when we wake up. (boiling = u must see the water boil vigorously for about 5-10min before switching off the fire and closing the lid - you can't open the lid after that until morning when you would reboil the pot of food again.)

20 jan 2023 fri - eve of the eve - went ntuc to get last minute stuff,
cooked buah keluak, sioh, cabbage soup, prepared meatball, prawns, etc
21 Jan 2023 sat - 除夕 cny eve, reunion dinner!
22 Jan 2023 sun - 初一 cny day1 - bakwan kepeting, leeks with prawns
23 jan 2023 mon - (kids are out) lunch at changi beach club, porridge for dinner
24 jan 2023 tues - lunch & dinner at home - made more bakwan kepeting, had yu sheng!
25 jan 2023 wed - lunch - minced chicken patties, dinner - leftover buah keluak & bakwan

Bakwan Kepeting - Crab Meatball

Recipe - Bakwan Kepeting:
meatball mix:
(leave in the fridge for 1-2 days to set)
- minced pork - seasoned
- minced chicken (added for this cny only)
- coarsely minced fresh prawns (i use kitchen scissors to cut them up)
- sotong paste
- prawn paste
- fish paste (from fishball stalls)
- bamboo shoots - cut into strips, 2 packets
- water chestnuts - chopped
- 1 egg
- cornstarch
- seasoning - salt, white pepper, light soya sauce, fish sauce, fried garlic crisps
- fresh coriander leaves and stems for garnish

Braised / Stewed Mushrooms
with dried scallops, fish maw and
sea cucumber in chicken feet jelly stock!
Recipe - Braised Mushrooms
with fish maw, dried scallops, sea cucumber
1. jelly stock
- slow cook chicken feet in water or neutral chicken stock
- season - salt, white pepper, shallots x6, garlic x1 small clove
- keep overnight in fridge till jelly forms
- remove chicken feet, set aside jelly stock for braising mushrooms
2. dried baby scallops
- quick rince and soak in chinese wine, water
3. chinese dried mushrooms -
best is 花菇 flower mushrooms,
next best is 香菇 xiang gu, fragrant mushrooms
- soak mushrooms in room temp water till soft,
- cut off stem, lightly squeeze dry and prepare to cook
- fry chopped garlic, onions, ginger (2-3 slices)
add mushroom, seasoning and fry together till fragrant
- oyster sauce, fish sauce, light soya sauce,
- shaoxing chinese wine and sesame oil,
- salt and white pepper to taste
- add dried scallops and soaking liquid (chinese wine)
- add fish maw
- add jelly stock and additional stock or water if needed
- slow cook overnight or for a long time, till mushrooms are done
(this year, i must have slow cooked the mushrooms for at least 12 hours!)
more ingredients
to cook together with mushrooms, add 10-15min before serving
- abalone
- sea cucumber (scalded and boiled for 5min before adding to mushrooms)
- fresh/frozen scallops
before serving,
add shaoxing chinese wine, sesame oil, crispy fried garlic,
chopped spring onions and fresh coriander
dish out and serve hot
with veggies - boiled broccoli, spinach, kai lan, xiao bai chye or shanghai greens

Recipe - YU SHENG - How to ...?
1. peel pink pomelo from thailand
2. shred white radish, green radish, red radish,
3. shred carrots, cucumber,
rinse and soak veggies in water for at least 15min
drain water and keep in the fridge
4. prepare coriander, lime juice
5. baby abalone - heat up in soup
6. prepare jellyfish and season according to packet instructions
7. get pickles set, crunchy crackers and big plate ready!
8. toss toss toss and eat eat eat!
(forgot the mangoes uggh)
jannah helped out a lot!

since i had oil in the pan, i made patties with leftover pork mince and shreeded veggies
heated up the 2 year old popiah arh and made kueh pie tee!!

no pics. spent 2-5.30pm at A&E -
christen injured his eye, hit by the gun muzzle.
then i got caught in a horrible peak-hour jam for 1.5hrs.
reached home 7.40pm, started cooking and
finished dinner around 10pm.
