Recipe: STEW
Abalone, Sea Cucumber, Scallops, Mushrooms Stew
Ingredients
1. baby abalone x1-2 cans
(save the liquid if not a brine and not smelly)
2. sea cucumber
(i get mine frozen at the supermarket since i'm too lazy to prepare...)
3. dried chinese mushroom
- soaked and stems removed
4a. dried scallops
- soaked in shaoxing chinese wine
4b. frozen scallops from japan 1/2 kg or more
- defrost and strained of liquid
5. fish maw
6. other fresh mushrooms - whatever is available
- fatt choy (looks like hair)
- oyster mushrooms
- king mushrooms
- straw mushrooms
- button mushrooms
7a. chopped fresh garlic x2 tbsp (add at the beginning)
7b. crispy fried garlic x2 tbsp (add as garnish and/or at the end)
8. homemade chicken stock x1 bowl
- best made from chicken feet
- or use collagen soup
Gravy for Stew
- light soya sauce
- oyster sauce
- shaoxing chinese wine
- salt and white pepper
- sesame oil x1 tbsp
- chicken stock or water
- optional - slurry (cornstarch and water)
Method:
1. Fry garlic in oil until fragrant
2. add prepared dried scallops, chinese mushrooms and fry till fragrant
3. add gravy marinade
4. add homemade chicken stock and let the gravy simmer
5. add the other fresh ingredients and mix
6. add slurry to thicken, make sure ingredients are cooked
7. serve hot and top with shaoxing wine 1-2 tbsp and sesame oil 1tbsp
8. garnish with crispy garlic, spring onions, cilantro and cut red chillis

- chopped garlic & ginger
- Dried Chinese Mushrooms
- Fa Choy
- Straw Mushrooms
- Sauce Mix
- Optional: Abalone, Dried Oysters
Sauce Mix
- oyster sauce
- light soya sauce
- shaoxing wine
- pinch of salt & sugar
- white pepper
- fried garlic & garlic flavoured oil
- sesame oil
- stock (from boiling chicken feet or lightly flavoured stock from veg or seafood or meat)
