you can use noodles of your choice, like
hokkien or sek mee,
bee hoon (laksa or the normal bee hoon),
kuay teow (fresh or dried, any thickness, width or type)
or longtong rice cakes

so tasty and ONE of a kind
our fried rice is always ONE OF A KIND since it only uses a combination of leftovers which may not be available the next time you want to make this fried rice for breakfast the next day!

prawns and batang fish and chye sim or other veggies
goes well with a cut chilli and light soya dip

but these days i'm beginning to think she only used very few and simple ingredients for the rempah. it seems to work almost just as well with dried/fresh chillis, shallots, garlic and hae bi (dried prawns).

almost all sold outside are too sweet and too blah for me :(

strangely, the kids aren't a fan of this dish
but with very little sugar!
kuay teow fried with chopped garlic & fresh chillis,
oyster sauce, light/dark soya sauce, pinch of sugar,
salt & pepper & chilli flakes to taste
cooked with any lightly seasoned meat and veggies

almost like a teochew fried kuay teow with eggs
(missing lap cheong or chinese sausage, chives or koo chye and cockles or hum)
i used the chicken rice light/dark soya sauce,
eggs, bean sprouts and chye sim for this noodle stir fry.
ate this with sambal belachan and a squeeze of fresh lime!
very simple. and we ate up everything LOL

Sar Poh Fan or Claypot Chicken Rice
Cooked in the Rice Cooker (not cooked in the claypot haha)
usually enjoyed with leafy greens like chye sim or kai lan.
this time, i have chicken rice chilli sauce made on my own!
ingredients
- fried salted fish (use ikan kurau)
- fried lap cheong or chinese sausage (i like the red wine ones)
- chicken thigh cubes
cooked with dried chinese shitake mushrooms,
chopped ginger, garlic, onions,
oyster sauce, light & dark soya sauce,
chinese shaoxing wine
- spring onions and coriander and chinese celery (kng chye)
greens like chye sim or kai lan.

using the layering technique
layer 1 - curry masala chicken, mutton, seafood or veggies
layer 2 - basmati rice
layer 3 - chopped fresh mint leaves, coriander, fried crispy onions
optional - saffron liquid
the meat, seafood or veggie curry must have
- yoghurt,
- good briyani masala,
- meat curry powder or fresh paste/rempah
- mixed spices like cumin seeds, green cardamon, cinnamon, cloves, etc
- green chillis,
- onions

tried to cook glutinous rice again!
didn't have the most ideal ingredients.
so i was surprised the dish turned out so yummy!
i made one lot sweet and another savoury.
Sweet Glutinous Rice
ingredients
- glutinous rice - soaked for at least 3 hours
- coconut milk
- raw sugar or gula melaka

Savoury Glutinous Rice
ingredients -
mix them together and then steam
- glutinous rice - soaked for at least 3 hours
- dried chinese shitake mushrooms
- leftover chicken thigh cubes fried with garlic and preserved szechuan vegetables
- garlic oil & crispy fried garlic
- water or chicken stock
- sesame oil
- pandan leaves
- salt & white pepper, light soya to taste
other ingredients that can go into the rice mix:
- chinese sausage, lap cheong
- dried scallops (or dried hae bi) soaked in chinese wine

dried chinese shitake mushrooms - soak
soak dried scallops in shaoxing wine & water
remove seeds from dried red dates
soak glutinous rice for 3 hours or more

Fried udon noodles
1. gravy mix -
- oyster sauce,
- light soya sauce,
- garlic paste,
- cut ref chilli,
- rice vinegar,
- raw sugar 1/2 tsp,
- mirin,
- sake
- black/white pepper
- japanese chilli pepper, Shichimi (7 types)
2. any meat, seafood, veggies
today i used koo chye, bean sprouts, chinese cabbage
and leftover chicken (san choy bao)
3. splash of sesame oil
Miso Udon (Soup)
ingredients
- udon noodles
- veggies, mushrooms & meat, egg - your choice
- fresh spring onions, coriander
- soya sauce, sake, mirin
- chicken/pork/dashi stock -here i use kelp stock
- miso - i'm using the instant packet miso because i didn't have any miso paste

Ee fu mee - braised Ee Fu noodles with mushrooms and chives
Con Siew Ee (Yee) Mee
1. Ee Fu Noodles - boil to soften
then set aside noodles and season noodles with
- dark soya sauce,
- sesame oil,
- shaoxing chinese wine,
- fish sauce,
- light soya sauce
- oyster sauce
- white pepper
2. fry garlic and shimeji/straw/shitake mushrooms till dry
(can season with little salt & pepper).
you can add any seasoned meat or seafood of choice,
eg chicken, pork, prawns or seafood like fresh scallops.
3. add noodles and fry till fragrant
4. add chicken stock or braised oyster sauce & garlic chicken.
today i added leftover braised garlic chicken wings with oyster sauce.
you can also make a sauce/gravy out of the seasoning above...
then, add some water & chinese wine to braise the noodles
until noodles become soft and almost dry
5. add your vegetables, like bean sprouts, chives (koo chye),
spring onions, iceberg lettuce, kai lan, etc.
6. just before you switch off the fire,
add sesame oil and chinese wine
to finish off the dish, making it fragrant.
serve hot!

cooked again with 1 bundle of noodles and loads of veggies.
this time, i wanted some gravy to go with the ee fu noodles...
you can get the noodles from NTUC for $2
for the portion on the plate above, i used 2 bundles of noodles.
(each packet has 4 bundles)

Smoked Salmon Pasta - how to cook:
1. boil veggies, mushrooms, pasta in salted water. set aside
2. fry garlic and onions till fragrant
3. add smoked salmon and fry
4. add milk and cream cheese
5. add pasta and mix
6. season with salt and black pepper
7. add veggies, mushrooms and mix
8. serve with fresh lemon slices for lemon juice

HOW TO COOK RICE IN A NORMAL POT

i just bought a rice cooker today
so i will miss cooking rice over the stove :(
rice cooked over the stove seems to be perfect most of the time!

added lap cheong when cooking rice!
how to cook rice over the stove with a normal pot.
1. use a small pot with a heavy bottom
2. add 2 cups of rice and wash rice till water is clear
(this feeds about 3-4 of us at home)
you can use any amt of rice -
the method works with any amt of rice!
2. add water
- measure level of rice using finger. mark the height with finger
- measure level of water above the rice with the same finger.
it should be HALF of the height of the level of rice
3. close the lid and boil the rice over high heat.
watch for bubbles. this should take 1-2min
4. once the water starts to boil, turn fire down to low.
watch that the water doesn't overflow out of the pot!
5 set timer 10min.
6. when timer sounds, switch off fire.
do not open the lid of the pot.
let the rice steam & sit inside - about 5-7min.
7. mix rice to fluff up and close the lid again.
let the rice sit for about 5min.
8. serve hot rice. it should be perfect!
below:
i'm boiling the rice grains with 2 chinese sausages (high heat).
no change to the recipe, eg water level or timing.
you could add a little more water though or boil it for a little longer than normal
and looking at the cooked rice, it seems perfect for me!
