11. Veggies and Toufu / Tofu

Veggies!!! and Tou foo!!! or Tofu!!
炒菜和豆腐/豆干

i love veggies and tofu!
sometimes i just boil veggies with salt and sugar
sometimes i fry them with garlic, salt and white pepper
sometimes i want a rempah to go with my veggies!

below some home cooked veggies that sometimes tastes like what you buy at the zhi char or food stalls. takes a bit of effort and right cookware but so satisfying when done right!

stir fried dou meow at home
just salt, pepper, light soya, fresh garlic, shaoxing wine and do a wok hei!

beijing cabbage, carrots, dried wood ear black fungus (hard variety), dried chinese mushrooms, chopped garlic and tung hoon



from nasi padang stall... 
bendy (lady's fingers) with egg, brinjals, sambal goreng (taukua, tempeh, long beans in a sambal), sambal kang dang (potatoes), with rendang gravy and sambal belachan

chye sim
sometimes, when chye sim is fresh and "young" (baby chye sim, young shoots), i simple boil them in water seasoned with salt and sugar. that's it. the chye sim will taste incredible!



simple veggie side dishes
now i simply like boiled veggies, seasoned with salt, white pepper and sesame oil
sometimes i mix in raw garlic into the sesame oil, then season with salt and white pepper before seasoning the veggies - soy bean sprouts / bean sprouts, spinach or bayam, cucumber




boiled round/sharp/baby spinach 
seasoned with salt, white pepper and sesame oil
sprinkle with toasted sesame seeds on top will make it look good




Roast Vegetables

roast veggies
- butternut pumpkin
- carrots
- fresh mushrooms
- boiled potatoes
- red & green capsicums
- tomatoes
- onions

mix marinade together:
- crushed garlic
- salt, black pepper, oil
- fresh parsley
- fresh thyme, rosemary
- lemon juice & lemon rind





sambal kang kong - 
still haven't found the right recipe yet
basically need dried prawns/shrimp/hae bi and sambal belachan

if not, just roast with salt, pepper and oil.

veggie stock always great for soups!! like miso soup!!

1. buah keras x5
2. serai x1
3. red chilli x6 (big)
4. fresh turmeric, kunyit 1"
5. shallots x10
6. garlic x7

ingredients
- tempe
- tau kuah
- long beans or french beans
- onions - sliced
- red and green chilli - roughly cut or sliced
- serai x1-2
- limau purut leaves x2-3
- optional - coconut milk to thicken
- optional - dired red chillis






Recipe - Coleslaw 
- shredded cabbage (raw)
- shredded carrots
- raw garlic - chopped or roughly pounded
- wholegrain mustard
- mayonaise / japanese mayo
- lemon juice
- sugar
- salt and black pepper
- garlic flavoured oil (cooked or raw garlic oil)

su chye - a teochew chinese cabbage stew with a few ingredients

Recipe - Su Chye
fry garlic
add dried scallops
add chinese cabbage
fry till fragrant
add water or stock (ikan bilis and/or chicken stock)
add chinese shaoxing wine
season with oyster sauce, light soya, salt, white pepper, sugar
stew till cabbage is soft. 
if want crunchy veggies, add stock/water before adding veggies

add: 
- vegetarian mock abalone, 
- corn, 
- canned straw and button mushrooms 
- dried mushrooms, 
- bamboo shoots,
- carrots, etc

Recipe - Veggie Stew
this stew usually includes fresh seafood 
and flour-coated fried fish slices or fried fish head

- napa cabbage (used 1/2)
- mushrooms
- carrots

- ginger -  approx 1 inch
- garlic - 4-5 cloves, chopped
- red chilli x1
- tofu skin
- eggs

cooking
1. fry the ginger till fragrant
2. add garlic and salt, fry till fragrant (also added fried garlic)
3. add the hard stems/stalks of the napa cabbage and carrots
4. add oyster sauce, mushroom sauce, light soya, mountain sauce, white pepper
5. add shaoxing wine and sesame oil
6. add chicken or pork or fish/ikan bilis stock
7. add all the remaining veggies and red chilli
(add prawns and/or fish slices for seafood flavour)
8. add tofu skin and eggs 
9. add cornflour slurry and thicken gravy
10. switch off the fire, add shaoxing wine, sesame oil and serve hot

Recipe: Chinese Mushroom Stew
CNY Day1 - 25 jan 2020

Ingredients
- chopped garlic & ginger
- Dried Chinese Mushrooms
- Fa Choy
- Straw Mushrooms
- Sauce Mix
- Optional: Abalone, Dried Oysters

Sauce Mix
- oyster sauce
- light soya sauce
- shaoxing wine
- pinch of salt & sugar
- white pepper
- fried garlic & garlic flavoured oil
- sesame oil
- stock (from boiling chicken feet or lightly flavoured stock from veg or seafood or meat)

roast / grilled veggies



Recipe - Roasted Capsicums
1. roast or grill red capsicums + 1 green capsicums till charred
2. cover and rest the veggies 
3. peel off the charred skin
4. cut into strips
5. season with salt, black pepper, balsamic vinegar, honey, 
olive oil and/or garlic-flavoured oil
6. serve - add roasted capsicums on plain crackers or oglio olio or baked potatoes





Recipe - Roasted Pumpkin
- season pumpkin with salt, black pepper, garlic-flavoured oil
- roast till just tender (about 15min 120 degrees)
- serve hot

optional - squeeze a bit of lemon

Recipe - Sambal Kang Kong
1. fry garlic, onions, hae bi (dried prawns)
2. add dried chilli paste x1 tbsp
3. add sambal belacan x2 tbsp
4. add sugar and salt to taste
5. fry chilli mixture
6. then add kang kong and fry 
7. serve hot with steamed rice

Recipe - Spinach with Salted Egg and Century Eggs

1. prepare spinach, separate leaves from stems
- round, sharp or red spinach are ok
- chinese spinach or puay leng is ok too

2. roughly cut salted eggs and century eggs into cubes
- i bought 1 cooked salted egg and 2 century eggs from the market
$0.80 each x3

3. fry garlic
4. add spinach stems and fry

5. add water or stock
i used stock cubes (ikan bilis and chicken, about 1/2 of each)
can also add marinated minced pork or chicken

6. add salted and century eggs
7. add wolf berries
8. boil the soupy dish, add salt and white pepper to taste
9. add chinese wine
10. serve hot with rice
