PORK & PORK ORGANS (aka PORK SPARE PARTS Lol)
Pork dishes are mostly home cooked as the meat is easily available and tasty when cooked "kampong style" - simple and yummy!

my family's pork and bamboo shoots stew (babi rebung kuah lada) - this is nonya style - red chillis, garlic, onions, white peppercorns - pounded together as rempah. pork can be subsituted with chicken - best with thigh and drumsticks
Recipe - Babi Rebung Kuah Lada
- pork
- bamboo shoots
rempah (agak agak)
- big red chilli x4 - adjust accordingly
- green chilli - optional
- green chilli - optional
- garlic x3 cloves
- onions x2 medium
- toasted/roasted belacan, 1/2-1tsp
- white peppercorn x tbsp - adjust accordingly

1. season pork collar (ngo huei) with:
- honey (or raw sugar),
- light/dark soya sauce,
- 5 spice powder,
- salt & white pepper to taste
2. roast with a cup or a bowl of water/stock
this pork and spare parts noodle soup is my fav since 1970's
(famous middle road prawn and pork rib noodles)

Recipe - Grilled Pork Ribs
1. Pork Ribs (can use chicken too)
- season with salt, baking powder and water
- give a quick rinse, throw the liquid
- boil the pork ribs for about 5-10min
- then put aside. throw boiling liquid.
- braise in water/stock till soft
- season braise liquid with
6 garlic cloves,
3 shallots,
2 dried red dates
salt and white/black pepper
2. Mix BBQ Sauce
- HP sauce or worchestershire sauce- tobasco sauce
- tomato sauce
- whole grain mustard
- salt & black pepper
- smoked paprika and/or chilli flakes
- mash softened shallots, garlic cloves from braising liquid
- oil
3. Baste tender soft Pork Ribs with BBQ Sauce
can also baste boiled potatoes with BBQ Sauce
4. Grill sauce-covered pork ribs (and potatoes)
grill 150-200 degrees for about 15min,
turn pork/potato and grill another 15min
5. Serve hot with salad

Vietnamese Pork Chops
Pork Chops marinade:
Step 1 - Mix the combined ingredients with Pork
- Baking Powder,
- Water,
- Salt & Black Pepper,
- Soya Sauce,
- Oyster Sauce,
- Fish Sauce
- Sugar
Step 2 - Add Minced or chopped, mix with seasoned Pork
- Lemongrass,
- Garlic
- Onions or Spring Onions
Step 3 - Add
- Cornflour, mix
- Scallion or garlic oil - mix
Cooking Method
1. Leave pork in the fridge to season for about 1-2 days.
2. remove pork from cold fridge to rest for an hour at room temperature before cooking.
3. Fry onions with 1tbsp sugar & a pinch of salt, remove and set aside
4. Fry pork chops
5. Serve with sweetened fried onions, fried egg sunny side up,
fresh cucumbers, onions, tomatoes
and also with vietnamese sauce dip
(dip - fish sauce, sugar, lime juice, chopped garlic & chillis)

Minced Pork
too many recipes call for the humble minced pork!
basic seasoning:
- salt, white pepper
- light soya sauce
- cornstarch
- flavoured oil or plain oil
other seasoning:
- chinese shaoxing wine / mirin / sake
- fried garlic or fried shallots
- spring onions, coriander or any other herbs
- oyster sauce
- ginger and/or garlic paste

fried seasoned minced pork with:
- water chestnuts,
- garlic,
- chilli
- dark soya sauce. (oyster sauce works as well!)
this is a very home cooked dish that many chinese households and kampongs in sg used to have in the early days. sometimes it's served hot with a squeeze of fresh lime. today i served it 2 ways. first way is as a stir fried dish. second way is to make a thai salad dressing to go with it.
