love them!
think my fav is oxtail stew or oxtail soup!
these days (2023-2024), i've added the golden coin beef, ribeye and sirloin to my list of beef cut fav Lol
started cooking oxtail stew way back when i was in lower sec school. i remember stewing the oxtails for at least 3 hours. so, kids really could do their own cooking back in the day. these days, very few can cook for themselves.

Recipe - Simple Slow Cooked Beef
choose or mix - golden coin, oxtail, beef ribs
not as nice but ok to use - brisket
below: for 4-5 pax
1. clean and soak 1-2kg beef to remove as much blood
(leave beef in water for about 10-15min and then drain the bloody water.
repeat if the beef meat contains some more blood)
2. in slow cooker, add beef and water at room temp
start cooking the beef in room temp water (not hot water)
option: add beef stock cube (1/2) or beef stock
3. season
- salt, white and black pepper,
- shaoxing wine,
- light soya sauce sauce
4. add aromatics
- red shallots x6-8,
- garlic x1 clove,
- brown sugar 1 tbsp (or rock sugar)
- fried crispy garlic
- fried shallots/onions
- optional: 2 to 3 pieces of dang gui
5. slow cook for a few hours until the beef is the right texture
- until beef is tender or fall off the bone
6. serve hot!

OXTAIL / BEEF STEW
cook the above simple beef soup and then add:
(and don't use dang gui when slow cooking the simple beef soup)
- tomato paste or neutral spaghetti tomato sauce
- chopped carrots, potatoes, celery
- fresh or dried herbs - rosemary, thyme, bay leaf x1/2
(or use the spaghetti spice mix but don't use too much)
- button mushrooms- optional - red wine and/or brandy
- serve hot, topped with chopped parsley and sour cream
tomato beef stew goes very well with
- mash potatoes
- spaghetti
- toast bread
- fresh green salad

Simple Beef Soup
my slow cooker is around 3-4L
beef is covered in water at room temp and then i turn the power on
i put on high heat for around 3-4 hours
- beef golden coin or oxtail (i find brisket a bit tough)
- beef tendon x1 piece
- optional: beef ball (add in before serving)
- red shallots x6-8
- garlic whole x2
- red dates x4
- dang gui x2 slices
- salt, crushed white and black peppercorn
- light soya sauce
- fish sauce
- rock sugar or sugar x1/2 to 1 tsp (agak agak)
- fried crispy shallots and garlic
- chinese shaoxing wine 1-2 tbsp
beef soup is taken with noodles or steamed jasmine rice
- noodles - kuay teow or laksa bee hoon or u-mien
- bean sprouts - scalded lightly in salted water
- fresh chinese celery, coriander - chopped
- fresh cut red and green chillipadi in light soya sauce
- fried crispy shallots and garlic - for topping

and sometimes i make fried onions and a gravy to go with the steak

Recipe - steak sauce
- fried onions (x3 onions) - till soft
- honey x1 tbsp
- wholegrain mustard x1 tbsp
- ketchup x1 tbsp
- hp sauce x1-2 tbsp
- A1 sauce x1 tbsp
- oyster sauce x1 tbsp
- japanese worcestershire sauce x4-5 tbsp
- black pepper x2-3 tbsp
- white pepper x1 tsp

made steak for aidan and jannah
also slow cooked the golden coin
bought beef $130
- golden coin, just above 1.5kg - about $40
- sirloin steak x10 pcs $50-$60
- ribeye steak x4 pcs + 1 end pc around $40-$50
gave 2 ribeye to dio dio
gave 2 ribeye and 2 sirloin to doris and liang
kept 1 ribeye end pc and 2 sirloin pcs in freezer
cooked 2 sirloin for aidan's and jannah's lunch
slow cooked all golden coin in a soup
left 6 sirloin for Sunday's meal
dinner - sirloin steak!

- tomato ketchup
- chilli sauce
- salt and white/black pepper
- oyster sauce
- stir fried onions and garlic
- whole grain mustard (for this meal, didn't add the vinegar)
- balsamic vinegar (for this meal, didn't add the vinegar)
