- garlic,
- onions,
- dark soya sauce,
- oyster sauce,
- salt, white pepper
- sugar
- optional: green and red chilli

Recipe: Prawns fried har lok style
- prawns, onions, chilli, garlic, (optional - ginger)
- oyster sauce, tomato ketchup, chilli sauce, salt and pepper
- fresh chinese celery, coriander

Recipe: Goong Ob Woon Sen - Prawn Tung Hoon (Thai)
1. prepare main ingredients
- fresh prawns - 500g - 1kg, medium to large, cleaned with shells on
- tung hoon x3 -4 small bundles -
soak with water at room temp and drain water when softened
2. season softened glass noodles/tung hoon
- oyster sauce
- golden mountain soy sauce
- fish sauce
- light soya sauce
- shaoxing wine
- sugar
- sesame oil
3. aromatics to fry in claypot
- streaky pork, pork lard or pork belly
- sliced ginger x6 pcs
- crushed whole garlic x7 large cloves
- coriander roots x2 large pcs with stems
- coarse black pepper x2 tbsp
4. when aromatics release fragrant smells,
add seasoned glass noodles (tung hoon)
5. add fresh prawns and cover the claypot to cook
6. garnish with fresh coriander, chinese celery, spring onions
7. serve hot with steamed jasmine rice
and thai seafood sauce (nam jim seafood dip)
option: add a bit of chinese black vinegar to the dish

Recipe: Salt & Pepper Prawns
1. clean and season prawns with salt and white/black pepper
make sure prawns are not wet - i left them in the fridge for 2-3 hours to "dry"
2. in a hot pan with some oil or lard, pan fry prawns till it smells like bbq
turn prawns only after the shell changes colour and smells like it's been grilled
3. when prawn shells change to a red/orange colour, add onions and chopped garlic
4. (pan is still hot) stir fry onions and garlic with "grilled" prawns
5. sprinkle some salt and pepper, then stir fry to mix everything for a few more seconds

home made prawn omelette!!
i also steam prawns and have a homemade dip to go with them.
used to buy 1-2kg live prawns and steam them when i reach home. live glass prawns used to cost something like $12 to $16 per kg. i steam the prawns with no salt or seasoning (sometimes with chinese wine) and make a simple dip to go with my live prawns.
since i'm too lazy to write down and take pics for steamed prawns, here is a ref video:
