pork meatballs
it looks this way because i couldn't decide how i wanted to cook the minced pork LOL did i want to steam, stew, stir fry, make burgers or porridge with it? i still don't know. well, it ended up in a pot of soup and didn't taste as good as the salt was not enough for meatballs cooked in soup. anyways, the meatballs are still good i suppose. goes well with rice and chillis - any chilli sauce you're craving for or cut chillipadi in light soya sauce.

lunch - Soto Ayam
dinner - grilled pork ribs with mustard, tomato, tobasco and HP sauce
Recipe - Grilled Pork Ribs
1. Pork Ribs (can use chicken too)
- season with salt, baking powder and water
- give a quick rinse, throw the liquid
- boil the pork ribs for about 5-10min
- then put aside. throw boiling liquid.
- braise in water/stock till soft
- season braise liquid with
6 garlic cloves,
3 shallots,
2 dried red dates
salt and white/black pepper
2. Mix BBQ Sauce
- HP sauce- tobasco sauce
- tomato sauce
- whole grain mustard
- salt & black pepper
- smoked paprika and/or chilli flakes
- mash softened shallots, garlic cloves from braise liquid
- oil
3. Baste tender soft Pork Ribs with BBQ Sauce
can also baste boiled potatoes with BBQ Sauce
4. Grill sauce-covered pork ribs (and potatoes)
grill 150-200 degrees for about 15min,
turn pork/potato and grill another 15min
grilled the pork in my new halo light turbo broiler!
you can also grill chicken with the same BBQ Sauce

soto ayam for lunch!

lunch - dumplings from mayflower and fried rice
Dinner
Rolled pork with veggies, japanese style
rolled shabu shabu sliced pork with
carrots, onions and leftover raw baby chye sim.
then made a gravy with soya sauce, mirin, chinese wine,
and cooked the pork in the gravy
(next time i'll just pour the gravy over the fried pork)
kitchen smells amazing!!

- and leftover macaroni soup & ingredients.

- cornstarch slurry
- macaroni soup
or chicken stock with slices of ginger

Tau Yu Bak Recipe
instead of pork belly, you can use pork trotters, shoulder butt or pork collar.
you can also use chicken or duck instead of pork (not beef or seafood).

when i was young, i used to watch my mum and grandmother cook this dish after a morning trip to the wet market to get fresh ingredients. many households have their own version of tau yu bak. this is our childhood favourite, and i suspect, a favourite home-cooked dish among many chinese locals and malaysians too. and since we're also peranakan, we love our tau yu bak with freshly made sambal belachan! (for teochew flavours, use chopped chilli, garlic and rice vinegar or sng mi chou dip).
if you're away from home,
have to wing it to cook your own meals
and are desperately craving for,
or missing home-cooked food,
this tau yu bak dish is one of the few go-to dish!
especially for those who, like me,
have been miserably homesick!!
oh i know "miserably homesick" very well - been there, done that!!
well, this recipe below is for all and also for those who miss this dish like crazy - i hope this recipe helps bring some comforts of home to you :)

recipe: tau yu bak (teochew style)
- pork belly - or pork butt or pork collar or pork trotters
(sa cham bak, ngo huei, twee bak or de kar)
- thick black soya sauce
- light soya sauce
- salt to taste
- plenty of white pepper corn, crushed
- star anise
- five spice powder (little or can leave this out too)
- sugar
- garlic - about 15-20 cloves, whole
- shallots - about 3 whole
- boiled eggs
- tau kuah, tau pok

Dinner - 2 lobsters - boiled
and ate them without seasoning

yw gave me 4 live lobsters from his fish farm. we brushed their shells and then put them in the freezer for about 30-45min before boiling them in a huge pot with salt (2-3 tbsp) and shaoxing chinese wine (5-6 tbsp). i'm not sure why the shells didn't turn all red when boiled. so i boiled them a few times (maybe about 3 times) and about 5min each time. for dinner, we shelled the lobsters and ate them without any seasoning. the natural taste of the lobster meat is sweet, a little salty and it has a firm bite. it also smelt of the sea Lol.

bak kut tea with frozen pork soft bones
Recipe - Bak Kut Tea
1. pork soft bones 1kg
- marinade overnight with
salt,
white pepper,
chinese shaoxing wine,
baking powder and water
2. boil pork with salt and set aside,
throw the boiling liquid
3. slow cook the boiled pork with
- bak kut tea ready spices
or salt, white pepper corns,
a bit of 5 spice powder,
light/dark soya sauce
(depending on preferring the soup to look light or dark)
whole garlic cloves x10 or more,
red dates x8-10
optional - canned button mushrooms or straw mushrooms
