Teochew food is sometimes enjoyed with this salty-tangy- spicy sauce.
typical teochew meals include
- steamed fish
- braised goose,
- braised pork or pork trotters in black/dark soya sauce,
(also called tau yew pork or tau yu/you/yew bak)
- teochew porridge and accompanying dishes.

this sauce seems to have also been adapted in thailand as well
(i hear that the teochew community there is quite large)

Sng Mi Chou 蒜泥醋
Teochew Chilli Garlic Vinegar Sauce
red or green chilli / chillipadi - blended or cut into small pieces
tau cheo (fermented brown soya beans)
rice vinegar
fresh garlic clove - pounded or chopped
fresh chilli sauce mix (teochew sng mi chou 蒜泥醋)
1. pound red chillis and fresh garlic into a paste, not too fine
2. add rice vinegar and light soya sauce (or fermented brown soya bean)
if cooking this mix,
cook the chilli paste (without garlic paste)
with a little water first,
then turn off fire,
add the raw garlic,
rice vinegar and light soya
into the cooked chilli sauce
sometimes, we blend the chilli & garlic
instead of cutting the chilli & garlic

my recipe version:
chopped garlic & red chilli
pieces of tau cheo - fermented beans
rice vinegar & sugar
fresh coriander
below is a different version of 蒜泥醋
it seems leeks can be used instead of garlic
